This authentic Mexican street corn recipe is a quick 5 minute elote recipe I learned from watching Mexican street corn vendors in Oaxaca, Mexico on KZfaq. Its a corn on the cob, boiled, tossed in cheese and seasoned with spices and lime. This corn is popular on the streets of Mexico and is one of the most delish corn recipes around.

Looks fantastic. I love sumac. For those that don't know, missing kernels is caused by lack of pollination. Each corn silk in the tassel is responsible for 1 kernel. For each silk to produce a kernel, it has to get its own piece of pollen on it. Corn pollen is usually carried by the wind in fields of corn. Sometimes the pollen saturation is really good and pollen will stick to each and every silk and sometimes it doesn't.

Nice elote brotha, next time soak them in water for about 15-20 minutes with the husk on then pop them in the microwave or the pit... The water creates better steam... Just saying, that's how I grew up eating them over an open flame of mesquite👍👍🌽🌽

Thanks Luis!! The husks of these guys we super moist so I figured that was good. I honestly never microwaved them but, 3 minutes and done? forgetaboutit! And yes, open flame is the way, but I thought for the purposes of mass appeal, I'd show the oven version, I feel like its presumed that it would also work on the grill. Nothing adds flavor like that open flame.

My ex’s grandmother is from Ensenada and she adds minced garlic, lime, cilantro, salt and pepper to the mayo. Brushes with butter as you did, then adds the mayo mixture then crumbled queso fresco. Unbelievably tasty!

Field corn for parching and sweet corn for steaming or roasting in Summer,are of course different things. The old favorite sweet corn was a variety called Silver Queen. Now super sweet varieties have been developed by the Ag departments at many of the games Universities in America. White sweet corn makes up a lot of the best eating strains.Even if you do not garden it is a revelation to look through old line seed catalogs in Winter/Spring. Such as Burgess, Ferry Morse and Burpee. Others too.) I like sweet 'corns' (cobs) with butter, salt and black pepper. But this Mexican variation looks fantastic!

Yes, and another cause of 'tip back' is the plant running out of nitrogen when filling and aborting those kernels.

Just a suggestion, but McCormick actually makes a lime flavored mayo that is similar to the style of mayo that’s widely used in Mexico. That way you can have the lime flavor without the mess of a fresh squeeze of lime on top

I agree with you that painting it with a light coat of the mayo is way better than most of the other builds where they slop it on so thick, that's all you're gonna taste!

I'd had both, with mayo and with Mexican crema. I hate the mayo version but LOVE the Mexican crema version. Do exactly what you did in this recipe, but just sub in the crema instead of mayo. It's amazing.

The silk are conduits for gametes to travel through to fertilize the corn. Each strand is for one only kernel. Corn pollen is distributed by wind. Wind blows and the corn fornicate in it. Sometimes a few of the strands never get a date and they must face the shame thereafter of a naked cob. The pollen is voluminous and often each strand of the corn's flower gets a pollen grain of it's dreams and the krib fills all the way to the top. But when you see a half barren cob of corn, it probably was due to too much rainy weather knocking the pollen out of the air on date night. Or that the stalks may have been planted too far apart or your cob grew up on the edge of the field and is therefore a hilly billy corn with snaggle teeth. Although feed corn experienced GMO disaster with Starlink and birds that are some died. Not good) It was due to bad kierality. The kierality of life is all about how everything living on Earth is left handed. Weird but true) But the square balled nerds at Monsanto who can't jerk straight, reinvented cold fusion or something after drinking twenty dollar Fighting Cock bourbon one day. Or something) And they assembled monster corn and it escaped on the wind (that they should have known about now.) and Frankensteined all the neighborhood organic farmers fields. Booo

Missing kernels are because of lack of pollination. Each one of the silk strands correlates to an individual kernel. If that particular strand doesn’t receive pollen, the kernel won’t develop. Missing kernels means missing pollination which probably means missing pollinators.

Lack of kernels at the top isn't a GMO thing, it's a pollination thing. Growing corn is a crapshoot, sometimes. You'll have a lot more problems growing organic corn in the home garden then you'll find with GMO corn in the supermarket. (I'm a gardener and have frequently failed at growing organic corn.)

It is very hard to grow corn without insecticides because of corn earworms. It would be better to peel back the husks, de-silk, wash or even soak, then fold the cleaned husks back over the ears. You can then microwave and carry on as in the video.

When possible use white corn! Yellow corn just has a different, sweeter flavor. My Mexican family has always rejected elotes with yellow corn.

Corn was actually genetically modified by humans hundreds of thousands of years ago by selective breeding and originally corn usually only had a couple kernels per ear

That’s called selective breeding. They weren’t injecting the genes of one species into a vegetable like they do now
