Happy Saturday love bugs!!! Today we’re finally doing our Black Author Spotlight and our first author up is Kennedy Ryan! Ryan had been in the game for some time and the last couple of years have seen the rise of accolades and visibility she deserves. So this one is for her! I hope you enjoy and I’ll see you tomorrow for a book haul!

Sweet Potato Pie Pancakes:
2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1 tsp nutmeg
3 tbsp sugar
3 cups buttermilk
4 tbsp unsalted butter, melted
2 eggs beaten
2 roasted sweet potatoes, cooled and mashed
2 tsp vanilla extract
Heat griddle to 375 degrees. Whisk together flour, baking powder, baking soda, salt, spices, and sugar. Set aside. In separate bowl whisk together remaining wet ingredients. Combine wet ingredients to the dry mixture and whisk to combine. Batter will have small lumps, don’t over mix. Ladle batter onto a hot buttered griddle and cook until golden brown and edges are crisp.
