Buche de noel seems to be the most famous of the Christmas cakes.
Bûche de Noël means "firewood for Christmas" in French,
It's a roll cake shaped like firewood.
It's not a smooth icing, but a rough surface like the bark of a tree.
Even if you're not good at cake decoration, you can make it beautiful.
The chocolate roll cake sheet used in this recipe has a high content of cocoa powder.
It's much darker than common chocolate sponge sheet.
Cocoa powder can be a little tricky to make because it easily turns off egg foam,
The sheet and the cream are not excessively delicious

▶ Ingredients (30cm * 30cm Square mold)
* Roll cake sheet

180g Egg
110g Sugar
28g Cake flour
28g Cocoa Powder
30g Milk
1) Add sugar to the eggs, mix well, and warm to 37 to 42 degrees Celcius.
2) Whip your hand mixer at high speed to make a firm foam.
3) Mix together the sifting flour and cocoa powder and fold lightly with a spatula.
4) Add the milk warmed to 5 ~ 60 degrees and mix well again to complete the batter then pour on the mold.
5) Bake at 180 degrees for 12 minutes. (Unox Oven)
* My oven has high heat than other type of ovens, so the time and temperature may not match your oven, so please check the time and temperature for your oven.
6) Remove the side sheets of parchment paper and lukewarm on the cooling net.
* cream
300g whipping cream
24g sugar
5g rum
1) Add sugar and rum to the Chilled Cream and whip it firmly.
2) Apply the cream on a roll cake sheet and roll out. Make it harden in the refrigerator for 1 to 2 hours.
* Ganache
60g Dark Coverture chocolate
60g Whipping Cream
1) Warm the cream just enough to boil the edges.
2) Put dark coverture chocolate and let it stand for 2 ~ 3 minutes to melt it and stir well with spatula.
3) Harden the ganache so that it can be spread on the surface.
