冰花的制作会用到5个原料:面粉,淀粉,泡打粉,水和油。
水和油都是介质,帮助冰花形成并且让它受热均匀。
面粉是冰花的主要原料,也提供了冰花的主体结构。
淀粉会增加冰花的酥脆口感。
泡打粉的发泡功能可以让冰花形状更加好看。而且进一步增强的冰花的酥脆口感。
视频中通过实验给大家展示每个原料在冰花制作中起到的作用。
需要提一下的是,如果你用铁锅煎饺,它的冰花效果跟用不粘锅会有所不同。铁锅煎出的花纹会更加细密一些。不管你用什么锅,什么面粉,都没有关系,你知道面糊水里每一个原料起到的作用,就可以调整配方,做出自己最满意的冰花煎饺。
The production of ice flower pattern involves five main ingredients: flour, starch, baking powder, water, and oil. Water and oil serve as mediums, aiding in the formation of ice flowers pattern and ensuring even heating. Flour is the primary ingredient, providing the foundational structure. Starch contributes to the crispy texture. Baking powder enhances the aesthetic appeal and further amplifies the crispy texture.
In the video, each ingredient's role in the creation of ice flower pattern is demonstrated through experiments, providing a visual understanding. It's worth mentioning that if you use an iron pan , the ice flower pattern may differ from that achieved with a non-stick pan. Patterns created in an iron pan tend to be more intricate. Regardless of the type of pan or flour used, knowing the role of each ingredient allows you to adjust the recipe and create the best pan-fried dumplings.
冰花煎饺配方:
可以做56-60个饺子
饺子皮
中筋面粉:360克
热水(80-90摄氏度):180克
油:20克
饺子馅
牛肉碎:400克
花椒粉:1/2小勺
白胡椒粉:1/2小勺
五香粉:1/8小勺
盐:1/2小勺
生抽:2大勺
老抽:1/2 小勺
生姜泥:1 大勺
肉汤:125克
面粉:1 大勺
鸡蛋:1个
大葱:1 根
热油:2大勺
冰花水比例
1 大勺面粉,1/2 大勺淀粉,1/2 小勺泡打粉,1 杯水
煎56个饺子,你大概需要一共3杯水,3大勺面粉,1大勺半淀粉,1小勺半泡打粉。
Pan-fried dumplings with ice flower pattern recipe:
For making 56-60 dumplings
Dumpling wrappers
All purpose flour: 360 g
Hot water(80-90°C): 180 g
Oil: 20 g
Fillings:
Ground beef: 400 g
Sichuan pepper powder: 1/2 tsp
White pepper powder: 1/2 tsp
Five-spice powder: 1/8 tsp
Salt: 1/2 tsp
Regular soy sauce: 2 tbsp
Dark soy sauce: 1/2 tsp
Ginger paste: 1 tbsp
Meat broth: 125 g
Flour: 1 tbsp
Egg: 1
Welsh onion: 1
Hot oil: 2 tbsp
Ice flower pattern ratio
Flour: 1 tbsp
starch: 1/2 tbsp
baking powder: 1/2 tsp
water: 1 cup.
To fry 56 dumplings, you need a total of 3 cups of water with 3 tbsp flour, 1.5 tbsp starch and 1.5 tsp baking powder.
