Hi Barbara! First of all a big big big thank you for starting this channel and making baby cooking fun! 😍😍I stay in India and follow your recipes every week.. So Ive never baked anything before and this Sunday i tried this awesome cake for my son's 10month bday.. I made a couple of modifications like I used cow's milk instead of coconut milk since I give him that anyway, I used maple syrup instead of apple sweetner and a lil honey (since I ran out of maple syrup - bad prep 🙈). Instead of apricots I used dried figs coz that was available at home. So the entire process was so much fun.. the frosting and batter came out super yum my lo kept licking on it from the spoon and both of us were too excited for the cake... but then came the biggest blunder.. so u said to bake it at 350 deg and my oven had only 230 deg... So I kept it at that only to realize that u meant 350 Farhenhiet and I kept it at 230 Celcius 🙈🙈 🙈... so the cake was a lil overdone but not burnt and tasted fabulous too... My son enjoyed it soooooooooo much it was like gone in 30 sec... Would love to share some pics of him enjoying the lovely cake... Thank you Barbara for this awesome yummy and super healthy recipe 🎂🎂

Last year this day I baked apple cheese cake from your other recipe. It was a hit. Today she turns 2 and I think I will make this one. Thanks again for making me a cool dad who can bake.

hi! this is great, can I make it w/o carrots? also I'm thinking of doing the chocolate cake you made and make this one but layer them with the cashew frosting. what do you think? hope you respond sooner! making it tomorrow!

Amazing. I love cashews. I wonder if it be still so tasty if I use other nuts? Like walnut?

This look so yum..😍😍😍..im thinking of using this recipe for my lil man 2nd bday,and im wondering if this will be strong enough to hold weight(ie making a 2x8" and 2x6"=2tiers) then cover with sugar free modelling chocolate as icing fondant😬 and decorations too.. will that be possible? My lil man requesting finding Nemo theme😬, but as much as possible i want to keep it healthy. I hope to hear from you soon.. thank you
