The Cornflake Tart, much like other simple, hearty dishes, found its popularity in post-World War II Britain. During this period, food rationing was still in effect, and there was a need for economical, easy-to-make recipes that could feed many. The tart became a staple in school canteens due to its simple ingredients and easy preparation.
A Popular Cereal, Introduced by Kellogg's in the early 20th century, cornflakes quickly became a popular breakfast cereal in the UK. Its versatility and availability led to its inclusion in various recipes, including the Cornflake Tart.
The National School Meals Service, Established in 1944, aimed to provide nutritious, balanced meals to schoolchildren. The Cornflake Tart, with its energy-rich ingredients like golden syrup and butter, fits well into the menu, especially as a dessert option.

Ingredients
Filling
125 g Cornflakes
125g Golden syrup
30g Brown sugar
65g Unsalted butter
Raspberry jam or strawberry
Pinch of salt
Pastry
- 420 g All Purpose Flour
- 65ml Water
- 150g Shortening
- 50g Butter / Marg
- 1 medium egg
- 1 tsp Apple cider vinegar
Oven bake 180 - 15mins
remove beans - 2 mins
Bake for 5 -10 mins with filling in.

Ha ha ha, yes! I had seconds. Different times and the intervention of some celebrity chefs moaning have changed school dinners. They will never have the chance to eat the food that brought up a nation. Best, Rik

I remember from my school days the raspberry and coconut sponge cake with custard. The smell coming from the school canteen pre-lunchtime was so enticing, I can smell it to this day 60 years later.

We loved this when we were kids in the 60’s. Today people would say “Oh my goodness, all that fat and sugar!”. But unlike kids today, we lived very active lives, most of it outdoors and we didn’t live in centrally heated houses. We needed those calories for energy and warmth. We also didn’t constantly snack in between meals.

A lot of dessert places near me sell these and the cornflake part is a little on the softer side. The ones I had in school the cornflake topping was hard and crunchy like a cornflake cake. I enjoy them that way a lot more. Gives nicer contrast

Thanks for the nostalgia. Use love my school dinners, but treacle tart and custard was something else for a kid the way you made it. Just not the same a bought one. Indeed todays school kids so missing on good wholesome dinners as they once were.

In Australia we make Honey Joys (recipe on the cornflakes box) which is basically the cornflakes mixture in patty pan papers. Staple of very kids party ever. I like to fancy them up with slivered almonds and cranberries.

Here in Aotearoa/New Zealand when l was at boarding school 50 years ago, we had a pudding that was only ever known as Boarders' Favourite. It had a base of buttery cornflakes flavoured with cocoa and a touch of cinnamon, a layer of custard and a meringue top. It really, really was our favourite! Sadly it disappeared from the menu and despite much pleading, was never seen again. I'm guessing that when that particular cook left, she must have taken her recipe with her. I've tried so many times over the years to replicate it but, have never even come close. All these years later l still think of it and every time l see a dessert with cornflakes l get so excited, thinking THIS might be the one. This DOES look great and l'll probably make it but, alas, it is not THE Boarders' Favourite. If anyone has ever heard of it or something similar, l would be so grateful if they would share a recipe.

You guys had the best stuff! This looks like kids would go crazy for it. I could see this being a favorite at a diner or cafe over here. I saw your " flapjacks" recipe one time and started making them for my family and they loved them so much they had friends and teachers asking me to make them. I called them Energy bars because Flapjacks here are big puffy pancakes. 😅 Thanks Rik.

We had amazing school meals in the 50/60s all cooked fresh on the premises every day. 😋😋 I loved e everything , even the prunes and custard. We used to have custard pie with pastry base, thin layer of raspberry jam, thick layer of custard topped with a sprinkling of coconut 😋😋 Jam tart with coconut on top. Chocolate sponge pudding with pink custard. I could go on for ever 😂😂 Good video, I'm giving the a go 🙋

At my school the cornflake filling was made with toffee that was brittle/hard and chewy... we used to have to bash it with the spoon to break it up - it was delicious and the best version I've ever had.

Back in the 1940s and 1950s my mother made a treacle tart which was golden syrup and breadcrumbs. She later on used cornflakes but never did add all the other ingredients.

We had a cornflake dessert at school in 70’s I remember it had stewed apples on a pastry base with a similar topping to this but with some light creamy topping under the cornflakes, have looked everywhere for that recipe, never found it 💙🏴󠁧󠁢󠁳󠁣󠁴󠁿

Omg I remember the cornflake tart with loads of custard what absolute heaven. Those were the great days when we had delicious school meals made by awesome cooks, we should have appreciated them ladies more.😘 Unfortunately I can't enjoy it nowadays because I am a diabetic 2 suffer.😢

A family friend wasn’t allowed to come to our house without bringing a Pineapple and custard tart! We went mad for it! Pastry case filled with layer of crushed pineapple, topped with Birds Custard and chilled in the fridge. Those were the days! Proper homemade puddings!

Definitely making this gorgeous creation next weekend. I think I would use strawberry jam but a good one from the shop and slacken it off with some lemon juice for tang. When I make homemade raspberry jam in the summer I will of course use that! Thankyou for the idea! I wasn’t lucky enough to have this at my school. We had chocolate or vanilla tray cake covered with thick icing and served with custard. They were also pretty epic to be fair! Just 1 last thing that was way more than a TSP of vanilla but you can be forgiven because you want a custard to be full on with vanilla!

I'm from NZ. I remember my Grandma making this when we stayed in the school holidays. She used to make the most awesome bread and butter put. Would you be seeing your way to make your way of making it. She used to make the tastiest Queen pudding. Yum.

My grandmother used to roll her rolling pin across the tart pan, cutting off the extra dough hanging over the edges before pre-baking the crust.

Good tip - however if you leave an overhang when blind baking the tart pastry cannot sink below the level of the tin when it bakes. Stick what works for you. Best, Rik

Best meal I ever had as a school dinner was a homemade minced mutton pie with a side of chips and carrots. With gravy too ofcourse! I didn't even know what mutton was but I loved minced beef pies and just figured it was the same. Really hard to find minced mutton now.

My favourite was mutton & barley, in a lovely thick gravy. Still add barley to many stews & casseroles, wonderful stuff. Used to make a casserole for my child when young chicken thighs, carrot celery etc & barley. I would warn her of the bones & remove them when cooked. i love yr channel i have made some of them i was in hospital 2 weeks doing better had to get new laptop old one hacked froze accts before could b ripped off so glad to watch again u enjoy food i get it so do i i am going off steriods for part of treatment by sunday but makes me hungry but love to watch u keep on cooking i see it brings u joy i work from home and if all goes well w b back to work on 18th

Hi Rik. I made this last week in our new Hysapentia. Ive always been so nervous of baking and you made it so easy to follow your recipe. I have made cornflake tart. It's so GOOD ! I remember being at school in Birkenhead and getting a slice from the dinner lady. I put it in my blazer pocket, wrapped it in a napkin and ate it in the playground !

As a child I visited England (in the 1960s) and I will never forget my first taste of Yorkshire pudding. That was it for me! Think I'll go make some scones...... Keep up your wonderful food.

Hi Rik. While you’re doing the old UK classics can you do a Cock a Leeky soup and Scotch eggs. A favourite from my childhood is Yayla soup, it’s a very simple Middle East rice and yogurt soup with mint and lemon and we always used to add spring onions to it. Loving these blasts from the past mate, keep up the great work. Cheers mate.

@@BackyardChef Beautiful. The Scotch egg must’ve been a while ago or I’ve forgotten it (my memory isn’t what it was) . I wish I’d paid more attention to food when I was a kid. I grew up in Caulfield (southeastern suburb of Melbourne in Australia) and as such was exposed to a full on multicultural society. Just in our close friends there were Russian (inc Ukraines), Greeks, Lebanese, Jews, Irish, Hungarian, Polish, German, Italian, Indians, Pakistanis, Chinese, Japanese, Vietnamese, Tongans (inc Māori), Africans, French and even an American (yanky) couple. My father was of multiple descents inc Romany and Asian but mostly Yorkshire. I’ll ask my wife about some aboriginal recipes but I doubt you’d be able to get the ingredients for the authentic stuff and most of what aboriginals claim as their own include ingredients they would most certainly never have had.
