I thought that as well. Only thing is that frying bacon in the pan leaves bits stuck to the bottom of the pan and eliminates getting the eggs out easily. Perhaps fry bacon in another pan and reserve the grease for the pie. Looks great though. I think I will try it with a pastry crust instead of the chips.

Interesting dish. Should you ever want to do eggs in the forest again, you might consider doing Shakshuka. Yup, I see it now--Boki dipping toasted Somun bread into soft, luxurious egg yolks surrounded in a tomato sauce with garlic, onions and assorted herbs etc. Mmm... ;D

Loved it.. The only thing you need to change is the thickness of the bacon. It should have been at the very least 3/16ths of an inch thick, not that see through stuff. 😀😀👍👍
