This recipe looks amazing and I want to try it. So many places in my area make bacon jam that's just bacon and onion cooked to death. While it has it's place and is tasty it's also super one note in an umami salt bomb sort of way. The chipotles, and herbs, and stout beer make this sound so much more deep and balanced. Going to give this a shot soon.

Sometimes, I grind a dried bay leaf in a coffee grinder. NOT the Starbucks coffee grinder. A different one, used only for dried herbs and spices. It refreshes the flavours. Yum. Know the dif between a spice and an herb? Herbs are the leaves. Spices are the bark (cinnamon), seeds, branches and roots, typically. Cilantro? The leaves and sometimes the tiny stems. Coriander? The seeds. Beet leaves? Herbs. The root? A veg. Love you, Chef Frank. Cannot wait to see you back on the 3-Levels w Ms. Rose.

@@tomf3150 I know that, silly. Cilantro is the leaves and short stems and the genus for the category, and is thus an herb. Coriander is a spice, the seeds. That's how you can tell the dif between an herb and a spice. Herb: Leaves and short stems. Spice: Seeds and stems. Cinnamon is a spice bc it comes from the bark of the tree. Celery leaves is an herb, but celery seeds are a spice. Ditto many herbs and spices. Happy cooking trails from a fellow foodie... ⚘🙏❤🙏⚘

Interesting idea to grind the bacon. I use a recipe that calls for bourbon instead of stout. I am certainly going to try adding the chipotle though. 👍

A friend of mine in England just got a Pepper Cannon. As a result, I can't borrow it to see how awesome it is and I can't quite afford one of my own yet. Basically a Pepper Cannon can grind ten times as much as a regular grinder due to its milled anodized aluminum design So I hope Frank gets one so I can enjoy it vicariously through his videos. Maybe a rich fan can get him one for Christmas :)

I've tried something similar in the past ,and while it turned out great, the fat would solidify and sort of separate in the fridge and I'd always have to warm it up a little to mix it back in before I spread it on some toast. Is there a way to avoid that hassle? Have I put in too much fat?

The fat will always separate and solidify in the fridge, you could just take out the fat if you want but that would be same as taking out the flavour😭

You could try using paper towels to drain off more of the fat from the bacon before adding it back in. Or leave the jam at room temp for a few minutes before using it, enough for it to just melt when it hits something hot.

I'd love to see some of your unconventional home cooking staples you make yourself that elevate your cooking as well as how you make them - I'd love to have bacon fat on hand because it's so good for a little extra savory salty flavor, but I have no idea on how to clarify or keep it.

It’s really easy. I keep a Mason jar on the back of my stove and just pour it straight in from the pan. If you wanted to, you could pour it through a fine mesh strainer to remove any burnt bits. However, I’ve found they settle to the bottom of the jar fairly quickly. Some people refrigerate theirs, but my family has had a jar or can on the back of the stove for generations with no issue.

How long can you leave it before it goes bad? This more out of curiosity than necessity because COME ON IT'S LITERALLY BACON JAM, that's the equivalent being late to your own funeral.

Hey, Chef Frank. We are longer consuming alcohol in our household. Period. I read online that coffee or stock would be good alternative for stout. Please let me know what would be an appropriate substitute. Thanks for awesome content.

Hey chef Frank can you answer my question about your portable stove. I see lots if chefs use these cookers why ? Does it produce more heat than a domestic stove or is it convinience? I was thinking of purchasing one for stir frying in the hope that more heat will be produced. As an aside I love bacon jam...thanks for the recipe

I use it mainly for filming purposes. They are great to have in case of power outages or if you want to cook outside. They aren’t expensive and give off great heat

Hey Frank, in your other videos you mentioned that freezing your meat and the grinder assembly before grinding is a good idea. Why was it unnecessary in this recipe? More specifically, how does freezing benefit the process, and how do we know when we can get away with it if we don't do it?

Freezing is recommended for sausage making, as you want to keep the fat as intact as possible for texture reasons. In this application, there’s not really a need to freeze.

You started with some pre-stored bacon fat to render the fat out of the bacon but then you proceeded to reserve some if not most of the fat out of the jam. So did you really need to start with bacon fat instead of water or just starting cold to render the fat out of the bacon?

You can do it any way you want. This is the way I do it. It works for me and gives me the end product I want.

The way I see it is that using a little grease (bacon fat, vegetable oil, etc.) simply helps things slide around during the initial rendering so as to prevent burning. I think. :) It also reminds us all that we ought to have bacon fat in the fridge at all times. I had a little left but it was rancid. I'm going to make this recipe today and I bought two packages of bacon so I could have more bacon fat around and then I'll use the spare bacon for BLTs or Red White and Blue Potato Salad or something.

Maybe i should experiment a little bit with this recipe, because 2 ingredients i cannot use, like bacon and beer, 😢

You can use Root Beer instead of actual beer, but remember to cut the sugar in that case. There is beef bacon equivalent you can get. Good luck.

I made bacon jam before and you can just cut the bacon in small pieces and then kinda try to mince it as finely as you like. At least that worked for me

Love your videos, Chef Frank, but please say things are going "well" not "good". A pet peeve of mine is youtubers using "good" as an adverb when it's an adjective.

He might not remember that. We're creatures of habit. Having said that, I agree, but it's not a pet peeve of mine. I have other pet peeves, usually centered around apostrophe abuse.
