Banana Cake with Cream Cheese Icing~ Kim's award winning recipe

Recipe for cake:
1/2 cup unsalted butter
1&1/2 c sugar
2 lg eggs
2 c ap flour
1/2 tsp salt
1/4 tsp baking powder
1/2 cup milk
1/4 tsp vanilla
3/4 tsp baking soda (mixed with bananas)
3 Bananas mashed
bake at 350 for 25 minutes (35 minutes for a 9x13 pan)
Recipe for Icing:
1/2 stick of butter (soft room temp)
8 oz cream cheese
1 lb powdered sugar
2 tsp vanilla

Years ago, I was running around like crazy, trying to get everyone ready and out the door going to a pot luck. I had a cake coming out of the oven. It was a disaster. No time or money for anything else. So I cut the cake up into cubes, made instant vanilla pudding to pour over the top, took frozen berries out of the freezer to serve on the side, and dubbed it “Chaos Pie.” It was almost all gone before the potluck was over.

Once I made a carrot cake. As I was cleaning up, I ran across this bowl of grated carrots... I ran and stirred them into the batter which had already started sitting up, but it miraculously turned out delicious. Phew!!! Probably the creamed cheese icing helped it happen.😄 God bless...

That looks so good! I left the sugar out of a pumpkin pie a couple of years ago! My sweet husband said that's ok I'll just sprinkle sugar on top!

Yummy, thanks Leslie. Bryant loves your good cooking. He’s a good hubby. Can’t wait for your kitchen redo. So exciting! Hamburger helper is good. When the kids were little I use to make the stroganoff one I believe. They loved it! There will be lots of time to cook from scratch when your kitchen gets done. Right now, it just needs to nourish your body with the least amount of mess. 🥰

I learned years ago from a almost 100 year old lady that made the best banana cake that the bananas need to be way over ripe to make the best cake! She was 100% right!

Thank you for sharing this recipe. You’ve brought sweet memories of my Mamaw to mind. Mamaw used to make a banana cake and unfortunately I don’t have her recipe so I’ll give this one a try. She used to put slices of banana between her layers when she frosted the cake. That’s fine if the cake is all eaten in a short period of time; otherwise the bananas turn dark and don’t look very appetizing so I don’t recommend that. I love watching your videos. So happy to have found you. May God continue to richly bless you and your family and your ministry.

This is my favorite cake of all time. I agree with Pastor about adding nuts. I add chopped walnuts on top of my mine after I add the icing. That looked so so good. We are cheeseburger hamburger helper family also. They are perfect for those days when you just don't have time to prepare a full meal.

Leslie, I have made many mistakes 🤣🤣🤣 glad you all enjoyed! I sometimes add pecans to top the frosting with, and my banana's are always darker😍 the darker the more flavor! I hope you enjoy all the rest of the goodies!!! ❤️❤️❤️

I make a banana cake using a boxed yellow cake mix and it's really good so I bet this homemade one is delicious! Hamburger helper cheeseburger macaroni, field peas, fried squash and sliced garden tomatoes! One of my favorite summertime meals!!

Been there, done that. Made a batch of candy and used canning salt instead of sugar by mistake. Just an FYI, banana cake is fantastic with Penuche frosting. Have a great day

HaHa! I broke down and bought Hamburger Helper, Cheeseburger Macaroni today because my 29 year old son requested it for supper. We are still eating your Strawberry cake. YUM! Gotta try the Banana Cake now but will take Bryant’s suggestion and add pecans.

The banana cake was wonderful when we made our banana cakes we put a chocolate frosting on like the boiled chocolate frosting with chocolate chips anyway it’s good that way too I’m glad to see that the remodel is starting take care

I had three really ripe bananas and began to mash it for bread...I actually happen to open you tube for Hillsong music videos and saw your page...figured I'd see what you were up to and saw banana cake😯 hmmm...sounds good! Got all my ingredients layed out and heard you say your two sticks of butter accident was actually delicious....now I am trying to decide if I should add an extra 1/2 stick of butter.. two is a bit scary for health reasons...lol

You’re so darn cute! It’s ok. My mess ups could fill a week of videos!!😩. Honestly you’re son is right-there’s something special about a 2 layer cake vs a sheet cake (9x13). It looks beautiful. Hi thanks for sharing this cake looks better than mine, I do not know what i did but the bananas were all in the middle of the cake and the batter did not cook well. may be I did not leave it in to long it was getting a bit Burt on top,so I will try this one see how i go. cheers every on, God bless you all.👍😋🦘

hi the griffiths grandma she has a huge bucket in the kitchen w flour in it she bakes alot loves to put chocalate cips in a lot of things i dont and some pple have pantrys for extra food so they dont run out have it on hand so u have xtra itemsinour old home had shelfs in the basement i was the helper gopher and the potatoes and onions were in a cold room wedidnt have a pantry but when we moved the kitchen got a makeover w/more counter space and we wased dishes by hand kept us busy

Does it take a half cup of butter or a cup? Your recipe calls for a half cup and i think a stick of butter is a half cup
