Here are some basic bedrock foundational cooking tips that will help you make delicious, easy, affordable, healthy vegan, plant based meals.
Garlicky Greens, turmerics- black pepper Basmati rice, chick pea parsley-green onion sauce.
Cheap, delicious and healthy. Sign me up. I could eat greens everyday and here is how.
another recipe from my time spent at Padma Samye Ling when i was cooking for the silent retreat.
This makes 4 meals each under £2.00 ( since i did this in the U.K. I know the cost here). it'd still be super inexpensive where you are.

Greens:
I Big Bunch Greens (Collards)
Large Bag Kale, pre chopped
1 Lemon, zested and juiced
4 Garlic cloves, diced
½ cup water
Chick peas:
1 Can Chick Peas, save the liquid - add to slurry.
1 Tablespoon Corn Starch for slurry
½ bunch parsley, diced
4 -5 Scallions, sliced thin
Rice:
1 Cup Basmati rice: 1.5 cups water
¾ teaspoon Turmeric
1 tablespoon black pepper
Pinch salt
Bay leaf

These are the absolute most ideal recipes for me - "basic," sure, but well seasoned, nutritious, and delicious. Have I made greens, beans, and rice before? Sure! But your tips on technique, prep methods, and flavor combining is so incredibly valuable. Can't wait for the next one.

I pickle the kale stems - super easy. Just stuff them into a big jar, pour your favorite flavor of vinegar over, add any extra spices you might like; garlic, colored peppers, tomatoes, etc. Screw on a lid and put in the refrigerator. They will last for more than a year. Eat them as a side taste treat with just about anything except a sweet! I also freeze big leaves of kale. It will crumble in the big jumbo bag. Roll up tight, freeze and sprinkle into whatever savory dish you might be making including a smoothie. Big time saver.

I should have also said that you can stuff kale leaves in the jar also. Another way to fix peppers is not throw out jars of peperoncini pepper juice but use the juice to pickle all kinds of fresh peppers! Just slice, chop or leave whole or whatever size you'd like and stuff in the jar, refrigerate and then wait a few days. Good on just about anything except ice cream! I also "pickle" commercially canned fire roasted tomatoes. Add garlic, vinegar, spices, herbs and again wait a few days and viola' you have a great taste treat.....enjoy.

That was one of the most fascinating things for me when I quit eating animals, there’s an entire world of veggies, ferments, fruits, legumes, different in every country. What a joy cooking is now. Give Frankie a snuggle from Georgie and the piggies. Me n kale not so much but I grow tons of it for the Guinea pig rescue, they like it. There’s a farm just down from mine, he grows the most incredible collards I’ve ever seen. Here in Georgia it’s so hot I never see him outside to ask how he does it. Great video, 🙏

I don't comment on videos very often, but you have made such a difference in my cooking life. I have been watching you from when you were in your pre pandemic kitchen with your brother! Everything that you make is inspiring, and when you made your most recent video about your month in the monastery, my heart was so touched and it made me cry. It was so beautiful. I love how you have Frankie, Miss America in your life. I just wanted to tell you how much of a difference you have made in my life and how I cook. I went vegan seven years ago, and you really taught me A LOT about how to cook vegan...and you still are teaching me. BTW, the food in this video especially the greens spoke to my Italian heart. Thank you for making these videos.

Brother…new to the channel…and I’ve gotta say, (from a die hard carnivore) your greens / chick pea video and lions main mushroom “steak” video really intrigued me. God knows we can all use a break from the animal food once in awhile…so I’m stoked to follow your channel and try out a few of these dishes on the Family. As a 50 year old meat eater…I’m starting to become open to alternative cooking ideas and techniques. Not gonna lie, Iv’e always been a bit skeptical of an “all plant diet conversion”, but your videos…definitely strike a creative chord…so Thank You. Cheers from the Inland Northwest!

If I'm making a dish -- maybe a stew or a casserole -- that calls for both onions and something like kale, and where you cook the onions first to soften them, I have gotten into the habit of finely, finely dicing those thick kale stems and adding them with the onions. They cook down nicely, and you're getting all those extra nutrients and fiber, as well as not wasting a thing. Makes me feel like our old ancestors who would use every bit of whatever they had in the kitchen, because they couldn't afford not to.

I am guilty of overbuying and then wasting food so much more than I want. I'm working on it, obviously, and channels like this really help me develop as a cook. I'm starting from what I already have before I buy more things now and it does challenge you to be more creative. I think understanding flavour-combining and how to use herbs and spices makes a huge difference.

I love the feel of your recent videos. Recipes like this are one of the many reasons my wife and I have been vegan for almost 25 years: they're filling, realistic to make regularly, and result in leftovers! (And no oven, which is a good thing in Texas when summer arrives. [As you know, we have the opposite problem of English Grey.]) Thank you for all the effort you put into the videos and all you do 😀

Derek, you are a kind and gifted man. I am thankful for you. God bless you richly. We love you and beautiful Frankie! I take kale stems and dehydrate them. Once dry, I powder them in my coffee grinder and store them in a Mason jar. It can be added to loads of things and no waste. ❤

The 'greens' you refer to, we call Sprng cabbage here in the UK. I usually steam for 3/4 mins max. I agree. It's so frustrating that here in the UK, it's really hard to get hold of kale other than already chopped in a bag. You have to go to farmers' markets or grow your own. Another great video, thanks 🙏💕

I from the UK and always called them 'spring greens' rather than 'spring cabbage'. Supermarkets seem to call them either just 'greens' or 'spring greens'. Either way they're bloody lovely and criminally underused.

I've been vegan/plant based for almost 9yrs now. I love it! I was never a big meat eater anyway, so wasn't hard for me. I buy meat but it's for my animals(dogs/cats) because their diet is mostly meat, and that's what they get. I make their food also(minimal cooking) i get air dried also(till i buy a airdryer). So I know what they're eating. I love your recipes,ive made many of them and just fablous! You & Frankie are just awesome. Cant wait for what else you've got cooking. Best way to use the woody stalks from silver beets or kale, chuck into a high speed blender with some fruits like apple and banana. They are excellent for juicing.

This took me about 90 minutes from start to finish but my kitchen is not as efficient and I don't have as many bowls or room to put them all. I subbed Korean chili flakes for black pepper and dill for parsley.. Also cut back on salt. Very good and would make again

Every time you say good girl in your video, my dog stops and turns his head wondering why you’re not saying good boy lol. He knows you’re talking to a dog as soon as he hears that tone in your voice. And every time you offer your dog, a treat, mine runs to his I absolutely love your videos. I only found you a few days ago and this is the second recipe I’ve made. The first one I now call the barbecue tofu sandwich.

Bless you for living in England, in the summer, in the cold, wet, and rain. Your cooking is an inspiration to me after being vegan for 18 months. So delicious. Thank you for this recipe. PS I studied in Aberystwyth, Wales for a summer semester in graduate school back in 1989. I packed summer clothes. But had to purchase boots and a couple of wool sweaters after I got there due to the low temperatures I was not expecting for the summer months. Also, along that coastline, the sun did not come out until after 3pm when the cloud cover lifted. Otherwise, lots of grey skies. But I loved it.

6:50 I always use the tasty water from boiled veggies (your method is brilliant btw, to add boiled water and let it sit) for soup.

I just made this, each step was really simple but it still took me like 2 hours. I'm just not fast at cutting everything up, but it did make enough food for 3 days at least and I really like the chickpeas with a different flavor than indian spices. The lemony garlic sauce was really good, that's a neat trick to use the juice from the can. Overall it's a good recipe, tons of greens which I love, easy flavors that aren't overpowering. It's just a normal home cooked dish. Buckle up for the prep on this one though, not difficult, just a lot of veggies!

We are minimalist plant based eaters, and this is perfect! Sometimes we literally eat black beans, farro, salsa and guacamole tacos for dinner. Or sweet potatoes with sautéed veggies, beans, kraut, and hot sauce. It’s nutritious, and filling so who cares. ❤️

I wasn't going to watch this, because I thought I know how to cook all these things. So glad I did. I have a garden full of kale. I have always just shredded it very finely and added it to things. Have never known to soften it in boiling water first. Thank you so much Derek. I love your style❤
