The simpler method to cook mutton curry with potatoes - A basic recipe everyone should have in their repertoire. Cooking time varies with meat and location.
Durban style mutton curry has a tomato based "gravy" with a mix of spices and ginger and garlic. Potatoes were often added to increase or extend the volume of the meal, feeding more people with less meat.
Ingredients:
1 kg lamb, cut (not too small) and washed
Marinate overnight with:
1 tbs Steak and chops spice
1 tsp crushed ginger
2 tbs oil
1 tsp Worcestershire sauce
1 small onion, sliced
2 small tomatoes, chopped roughly
1 tsp crushed ginger and garlic
A few sprigs of thyme
2 cinnamon sticks
2 tbs mixed masala
1 tsp hurdee (tumeric)
1 tsp salt
1/2 cup oil
3 small potatoes
Dhania to Garnish
Serve with rice or bread or roti. Can also be made into bunnie chows, but add a tomato for additional gravy. Great with a carrot and onion salad with lots of vinegar.
