As a Brazilian I missed some seasonings. The way the chef did it is very similar to how we do it in Brazil, but before putting it in the pan, we put oil, or olive oil, then add onion and garlic and let it brown. Only then do we add the rice and sauté for a few seconds to get the flavor and add water. Then we finished as the chef showed in the video

I do it very similar, but I also add Turmeric (ground) not only turns ‘yellow’ but for health reasons as you might know the health benefit of turmeric and you can hardly taste much turmeric tbh. But I will try your method tonight as it sounds quite exotic

Note that 1:2 method for rice and water depends on the rice type as well. For jasmine rice i recommend 1:1.75 For brown rice: 1:2.5 For japanese rice: 1:2 I can see the chef was using indian basmati rice so maybe that is why the ratio is 1:2 Also we dont normally use a strainer when washing rice but no problem with using it. It looks fancy but you are adding more utensils to wash later. You should also wash rice at least twice. Unless you are using a “no wash rice” (musenmai) which is something i only saw in japan. Depends if you are using a rice cooker or a pan with lid as well. In both cases ensure your lid is TRANSPARENT so you can see the rice without opening the lid. (This will help cook your rice perfectly) If you are using pan, you might also wonder when to remove the lid. wait for the rice to boil and spill A BIT of water out. Don’t panic. As soon as it does, remove the lid, put the fire on the lowest setting, and cover again. (Do this as quick as you can). Once lid is on do not touch and wait for the rice to cook. When do you know your rice is cooked? Your lid is transparent. You should be able to see how the rice looks. If it is no longer soggy and looks perfect then it is good to serve. If you are clueless white man then wait for soggyness to be gone, open the lid try it out. If it tastes perfect like your nearby asian restaurant turn off the heat and serve.

They way I do Fried the rice for a while until it get Brown color After water double size and and do not cover Let It Cook medium fire. When gets dry Lower.fire.and cover. For 15 minutes.

yup rice cooker. problem with the stove cooked rice is you need to lower the heat at some point. with the rice cooker it's automatic and generally more precise with the cooking.

Because I am from India, I could not think its difficult for some people to get the rice perfectly cooked. Also the water measure depends on the type of the rice specially the red boiled rice that is used in South India, requires a lot of water.

Try it the way my navy chef brother taught me. It never fails. Thoroughly wash the rice. Put rice in large pan with just enough cold water to cover it. Turn heat full on. Have a kettle of boiling water ready. When water in pan is boiling put ample water in pan from kettle. From first turning heat on it takes 7 to 8 minutes to cook. Taste rice and it will be almost but not quite cooked. Drain it and allow most of steam to escape, put rice back in pan and cover with lid. Cooking process will continue but with no water the rice can't turn mushy. You can leave it for minutes or hours and it will be light and fluffy when you go back it. I will just need to be fluffed up with a fork. Never fails.

If you are cooking big batches in a commercial kitchen then you can use the boil and drain method, but you have to wash it first or its just a mess.

Commercial or home kitchen, boil and drain is not good as you cannot control how much water it absorbs. It would end up absorbing too much and becoming too soft. It's OK for Caucasians that don't know how to cook rice but certainly not for people from rice eating countries. About 15 years ago, I had hard half-cooked rice in a rice salad served in the Intercontinental Hotel in Toronto. If a 5-star hotel could not do it right, what do you expect from an average Caucasian?

My friends taught me how to cook rice when I was in class 8th standard when we went out to forest trekking. If rice is new you need 1:1.75 rice to water ratio. If rice is older then 3 months ratio is 1:2 If rice much older than 12 months and above ratio need to be 1:2.25 More 12 months older rice will digest well and give better energy and good health.

There are a few reasons for it, some are more legitimate than others. These are the excuses I've heard: 1) westerners are obsessed with exact measurements in cooking and will legitimately freak out if you eyeball anything. 2) some people have longer fingers so they will complain that it's different for everyone and not precise (see above) 3) many would see putting your finger in the pot as unsanitary.

@@captaincharisma6574 yeah, you would get there after practice, of course. You just know after awhile, but even that's too imprecise for many westerners I've met. Many will weigh it down to the gram and will legitimately freak out if you eyeball like that. Not all, of course, but my roommates nearly had a stroke when I cooked for them. I didn't measure anything and just knew how much. They won't use their hand to measure even for practice and think it's unsanitary to eat after doing so and "don't want to waste food".

I'm Asian, but some crazy punk was washing rice. But here, I didn't wash my rice and my rice was bubbling. When you make fried rice at a restaurant run by bbc, wash the rice and give it to them. There will be magic that will eliminate customers.

As an Asian, also suggest that you may find your favorite type of rice. There are couple different type of rices, some rices smells better some rice softer, and personally, I love Japonica rices as they have a great texture. 2,

Also a quick tip: if you somehow mess up the rice like the presenter did at the start, & you don't want to throw it out, 1) add a little bit of water 2) put some butter/margarine/oil 3) stir well 4) microwave (take out time to time to see. Time for this depends on what you initially put in) 5) once you have lightly sticky rice, take it out. Let it rest for 5-10 mins (lid open) Your rice bowl is officially saved! PS. : consider adding Rampe/Pandan + a bit of salt for a much nicer earthier flavour. Source : self - eats rice 3x a day. 😂

What a waste of rice. Farmers did not suffer cultivating the land, making sure the weather is right, patiently waiting for the time of harvest, and suffer through harvest, despite being underpaid, and have had most of their land taken from them only for you to butcher their work like that. A lot of Asian parents would always tell their kids not to waste rice on their plates and force them to finish it if they don't. Cuz the farmers take a lot of effort to grow rice and harvest it and etc. Not everyone is born being fed by a golden spoon like u. Rmb where you came from or ask ur parents and their ancestors. Ur ancestors did not sacrifice their happiness to provide for their children and so on till ur generation for you to mock their hard work. Not everyone comes from the top.

That's good, but there's an even better method (Iranian): 1. Use long grain Basmati rice. Rinse it until the water runs clear (like in the video). 2. Add it to a very large pan of boiling water and boil hard, stirring very frequently. 3. After about 3-4 minutes, extract some with a fork and taste it. If it cracks under your teeth, continue cooking. 4. AS SOON as it no longer cracks (also, it turns much whiter) drain it thoroughly. (This step is critical.) 5. Put it into a hot pan or dish, with a thin layer of molten butter at the bottom. 6. Add a little butter on top and make a few deep holes for the steam to escape. 7. Wrap the lid in a tea towel, put it tightly on the pan or dish and keep it hot. (A pan warmer is ideal.) 8. Leave it alone for at least 15 minutes. You can leave it longer - even an hour or two. It takes a bit of practice to get it right, but the result should be perfectly fluffy rice that doesn't stick together at all (unlike in the video). Another advantage is that it can be prepared in advance, which is ideal for entertaining. (The Iranians like the brown crust that forms at the bottom with the butter, but I'm not a fan.)

The Indian lady chef is correct and what you said is also correct. The difference is only on the cooking tools. Normally Asian people like me, we use the rice cooker in regular basis. We use sausepan when rice cooker is not available at the moment. And of course, we likes to be quick and use the simple method (traditional technique) which is measure the water by using the finger. 😁

I used to cook rice the way the Indian cook described (and my wife still does) but when I cooked at an Indian restaurant, the old Indian grannies taught me to cook it like pasta. You can pinch it to know when it is done, then strain off the water. The bottom never burns, the rice never clumps.

I never wash my rice. Instead, I cook off the loose starch by roasting or frying the rice in the pot before I add water: until the rice grains become opaque and some of them brown a little. It adds a nice roasted flavor to the rice.

oh god people who strain their rice exist in this world. hate it here edit: i meant straining the rice after it has been "cooked." if it still has water after it has been "cooked" it means its very much undercooked or u added too much water.

Actually straining the rice before cooking is nothing different when washing the rice on the pot, it is just that its not common and we know what's worst is straining the rice and rinse after cook

U mean draining off the excess water? That's a pretty normal thing tbh. I'm from a country where rice is a staple that's how everyone makes it here. The starch gets drained off with the water n so it doesn't get mushy. A plus point is that u don't have to worry if u put in excess water.But ig it depens on the type of rice u r using as well.

I add a pat of butter and some salt plus some saffron to my basmati rice, but otherwise, this recipe almost exactly. Definitely careful measuring required. Next time I will try taking the rice off the heat at 10mins and then just letting it sit - as in this video. Always room for improvement! And in cooking, there’re always people from whom one can learn so much…

there is an invention called Rice Cooker. wash rice in pot->measure water with index finger -> put pot inside rice cooker -> turn on and let it cook automatically.
