黑椒牛肉炒意大利粉
材料:
急凍牛腱半隻
三色椒各半個
紫洋蔥(細)1個
意大利粉300克
處理:
1. 大火煲滾1鑊水。
2. 加入鹽半茶匙,放意大利粉落鑊,水滾起,冚蓋,熄火,焗6分鐘。
3. 牛腱,切出白色的筋膜,打橫切薄片,清水解凍,清水沖洗乾淨,擎乾水,廚紙索乾。
4. 牛腱調味:
a. 生粉半茶匙
b. 油半茶匙
c. 胡椒粉適量
d. 蠔油1茶匙
e. 生抽1茶匙
撈勻,醃20分鐘以上。
5. 意粉已浸軟,擎乾水。
6. 三色椒,清水洗乾淨,去籽,切條。
7. 洋蔥,去皮,清水洗乾淨,1開6,搣開一塊塊。
8. 預備碎黑椒1茶匙。
烹調:
1. 大火在鑊內煲滾清水1升。
2. 加入油1茶匙。
3. 加入三色椒,灼30秒,去除草青味,擎乾水。
4. 大火在鑊內燒熱油1湯匙。
5. 加入牛腱,鋪平,煎香。
6. 牛腱,煎了30秒,反轉繼續煎30秒,放上碟。
7. 大火在鑊內燒熱油1茶匙。
8. 轉慢火,炒香黑椒。
9. 黑椒已出味,加入洋蔥及意粉。
10. 加入調味料:
a. 蠔油半湯匙
b. 老抽半湯匙
c. 糖半湯匙
炒勻,加入油1茶匙,炒勻,加入少許老抽,炒勻。
11. 轉大火,加入牛肉,炒勻。
12. 加入三色椒,炒勻。
13. 完成,上碟,可享用。
Stir frying spaghetti with beef and black pepper
Ingredients:
Frozen golden coin beef muscle half No.
Tri colour bell pepper half No. per each
Purple onion (small) 1 No.
Spaghetti 300g
Preparation:
1. Heat up a wok of water at high flame.
2. Add in 0.5 tsp of salt, put spaghetti in wok. Water boils up, cover up the wok. Turn off fire. Leave it for 6 minutes.
3. The beef, cut the white tendons. Thinly slice horizontally. Defrost in tap water. Rinse thoroughly. Drain. Dry with kitchen towels.
4. Season the beef:
a. Tapioca starch 0.5 tsp
b. Oil 0.5 tsp
c. Pepper appropriate amount
d. Oyster sauce 1 tsp
e. Light soya sauce 1 tsp
Mix well. Season for 20 minutes.
5. Spaghetti has been soaked well, drain.
6. Bell pepper, rinse with tap water. Remove seeds. Get it shredded.
7. Onion, get it peeled. Rinse with tap water. Divide it into 6 shares. Separate it slice by slice.
8. Get ready for 1 tsp of grinded black pepper.
Step:
1. Heat up 1L of water at high flame in wok.
2. Add in 1 tsp of oil.
3. Add in bell pepper, soak for 30 seconds, to remove unpleasant smells. Drain.
4. Heat up 1 tbsp of oil at high flame in wok.
5. Flatten the beef in wok. Fry well.
6. The beef, has been fried for 30 seconds, flip over, and continue frying for 30 seconds. Put on plate.
7. Heat up 1 tsp of oil at high flame in wok.
8. Turn to low flame, fry black pepper well.
9. The smell of the pepper spreads out, add in onion and spaghetti.
10. Add seasoning:
a. Oyster sauce 0.5 tbsp
b. Dark soya sauce 0.5 tbsp
c. Sugar 0.5 tbsp
Fry well. Add in tsp of oil. Fry well. Add in little dark soya sauce. Fry well.
11. Turn to high flame. Add in the beef, fry well.
12. Add in the bell peppers, fry well.
13. Complete. Put on plate. Serve.
