Beer Braised Chicken Tacos
Serves 4
1 tablespoon vegetable oil
¾ cup diced onion
1 tablespoon ground ancho chilis
1 teaspoon ground cumin
1 can (4 oz.) green chilis
1 cup beer
2 cloves garlic. minced fine
2 cups shredded rotisserie chicken
soft tact shells
your favorite taco toppings
Heat a large stock pot over medium high heat for 1 minute. Add the oil and onion and sauté for 1 minute. Add the next 3 ingredients and sauté for one minute. Add the beer and garlic and bring to a simmer. Add the shredded chicken and simmer for 3-5 minutes until liquid is reduced by half. Serve on soft taco shells with your favorite toppings.
Enjoy with Bells Official Hazy IPA, Wicked Weed Lieutenant Dank American IPA, Souverain Cabernet or Starborough Sauv Blanc.
