I made this tonight because my husband and father-in-law are from Meknes and I had never made a tajine before and wanted to surprise them after their fast. It turned out great except I didn’t follow your recipe to a tee and put so many vegetables inside that I think the tajine was too full, a few of the potatoes burned a bit. They still loved it and said it was delicious and they gave me a few pointers. Thank you for putting some vegan Moroccan options on your channel.

That’s great ! A Tagine always has little burn at the bottom, it’s normal. Every time you reduce the sauce, you end up with something burning a little. I think most Moroccans expect that 😄. I’m glad you liked it and they liked it as well. I will have some more vegan tagines videos in the future. Take care 😊

It’s just going to take sometime, I have so many recipes in my head. But I do make my personal favorite vegan recipe with lots of summary vegetable: tomatoes, green peppers, onions, eggplants, and olives. So good 😄. Awesome ! I love maakouda. I tried this as my first dish cooked in tajine. Two mistakes: 1. I put all ingredients to onion with garlic, so I gave some more on the top - got too spicy in effect, 2. I was afraid the temperature had been too low and increased fire, so some of the onion with garlic and tomatoes was burnt on the very bottom. Cauliflower and potatoes were excellent! Instead of peas I gave some cocktail tomatoes cut in halves. Tomorrow I will try with veal... Thanks for this video!

For #1, you should balance the spices but also taste. Some times the pepper you are using is strong. For#2, the burning, that happens. There is no Moroccan Tagine that doesn’t burn a little from the bottom. But slowest you will start understanding how much heat you should use. Did you like it overall ? I liked it very much! When hot, but also when it got cold. When cold - it doesn't even seem too spicy. I love the idea of slow cooking with the possibility (but not necessity) to add several things after some time so easily (I used to cook in another kind of clay pot in oven but it's much less convenient to open it inside it) and I like that in tagine the vegetables did not turn into soup. It is great that the temperature of the top of the lid is good for a bare hand. Well, I think I'm falling in love in tagine :)

Once you are comfortable enough using it, you can start cooking whatever is in season or whatever you have in the fridge. Tagine is a normal family’s food and normal families don’t always chose what to cook. So take your take Tagine on some adventures 😉

Didn't realise that the Moroccans also used turmeric like we Indians do. You get get too far away from turmeric in India! Lovely recipe. Vegan, here, since 1997. Have never looked back! Cheers.

So, I tried this recipe for the first time tonight... and after having tried previous Moroccan recipes in the last weeks for vegetable tagine, I was super happy with how it turned out. I would've paid for it at a rustic homestyle restaurant, I was that happy with it! Really delicious and I hope to evolve and improve in my coming versions. I also have so much deeper appreciation for Moroccan food now, so much labour goes in to get it right but so worth it! Thanks for the inspiration!

You mentioned using a heat diffuser. Is there any reason not to use a pizza steel, or maybe just a large enough frying pan?

Maybe just conductivity. I would try something thinner, like the bottom of a cake pan of any thin spare metal cover. Like a big can cover. I hope that helps 😊

You can a Tagine on gas or electric stoves, just use low heat and try to use a diffuser. That’s fancy for a piece of metal that come between the Tagine and direct heat. You can find them on Amazon or just DYI something 😄

Happy New Year 😊. I use my Tagine on an electric stove all the time. To protect the Tagine use a heat diffusor. It’s something you can buy on Amazon or make shift metal plate like a bottom of a cake pan (that’s what I use). General tagine cooking guidelines: never using a temperature above medium high otherwise it will crack. I don’t put tagines in the oven and I also never seen it done in Morocco. When it comes to oiling the tagine before first use, it is preferable but not necessary. It’s mostly to create a coating of oil. If you live in Europe, you can find tagines in middle eastern shops for sure. Especially if you can find a Moroccan store. If in the US or other countries, your best bet is online. If you pay more than 35 for a Tagine, you are likely being ripped off. Overall get one if you can and cook low, slow and enjoy 😉😊

If you ever find yourself in Brussels, you can buy everything Moroccan for very cheap and authentic. You can let it sit in water in 24h. I never did but I think it will hurt. For tagines, go for functional first so that you can cook in it and maybe later find a beautiful one just for plating. I bet big cities in England also have Moroccan shops. Certainly London and Birmingham !
