My aunt prepared this exact same dish for a buddy of mine, since he is a vegan. He told me that it was hands down the best vegan dish he ever had! I hope other vegans have the same experience. But seriously get a Tajin cooking pot if you want to prepare this dish properly. It won’t be the same if you did it in any other pan!

Hi Alia. I love your recipes and your style of cooking. Would it be possible for you to do a video about vegetable cutting skills which Moroccans do using their hands (safely) without using a chopping board? I haven't seen any videos on KZfaq which show how to do this. It would be a great skill to acquire and it would be good for people to learn how to prepare tagines using traditional techniques as well as efficiently making them with little cleaning up to do. Thanks in advance.

yeah that is not a very "professional" technique but it actually much more comfortable and less messy, just make sure to use a dull knife (something that wouldn't cut into your skin if pressed against it). You'll need to press a little harder though to split the vegetable.

You can use any pot, but if you have a crock pot that's the American version of the tagine (the idea is to slow cook) except the slow cooking + clay pot = outstanding taste!

yes, you can use it on the glass stove. Just make sure you place the tagine first and then turn the heat, so the tagine slowly heats up and does not get a thermal shock. :-)

Tajine on its own is a Berber dish. All Moroccan dishes are Berber.

I would personally advice against using tomatoes. Because this is slow and long cooking, the acidity of the tomatoes will penetrate the vegetables and make them taste really off. That only works if the vegetables are short in contact with the acidity in my opinion. I tried both ways, no tomatoes wins hands down.

yes, this one is - it has been cured and it's holding fine. I would suggest to use a diffuser if you can. much safer for the tagine.

Karen Cheek Because it is a berber dish (berber refers to Ethnic North Africans or Amazigh ,most Moroccans are berbers but mostwho live in the cities have forgoten the language and the culture that got replaced by arabic and islam culture during the Islamic collonialism of north africa centuries ago)

Hitman Hatim It is absolutaly not a berber dish. Stews are very famous is many eastern cultures, and are an ancient arabian dish. In morocco there is no such thing as a berber tajine. There are tajines that are made by people living on the countryside and on farms, and do not have the finances to buy meat. Therefore, a tajine made without meat is now associated with people living on the countryside. In the whoke video, alia and the other chefcook did not speak of a berber tajine, Alia probably later on decided to call it like that.
