👩🏻‍🍳 CARROT CAKE
👩🏻‍🍳 CAKE
1 ¼ cups white sugar
1 cup canola or vegetable oil
3 eggs
1 teaspoon vanilla
2 cups all-purpose flour
1 ½ teaspoons cinnamon
¼ teaspoon nutmeg
1 teaspoon baking soda
½ teaspoon salt
3 cups shredded carrots (about 1 pound)
½ cup chopped walnuts
Extra nuts for decorating cake
Bake at 350 F or 177 C for 30 minutes
👩🏻‍🍳 FROSTING
8 oz cream cheese, softened at room temperature
4 tablespoons butter, softened at room temperature
2 teaspoons milk
1 teaspoon vanilla
4 cups powdered sugar/icing sugar

It looks sooo yummy! Good tip for keeping the cake stand clean. I have a cookbook that says if you forget to add flavouring to a cake, that you can brush it on the outside afterwards. I guess you could also add it to a simple syrup and brush that on the cake too.

Not a fan of Carrot cake but yours turned out nice. I hate when I forget to add an ingredient and cross my fingers it turns out good. I bet it taste good without the vanilla. Shirani, your not alone with frosting the cake. I say I am not a cake decorator. 😉 As long as it taste good it doesn't matter what it looks like to me. Aww sorry for your loss. I lost my 2 sisters too and they were good cake decorators. They made beautiful cakes. My oldest sister did my wedding cake. People paid her to make theirs too.

It's a good thing the ingredient I left out wasn't one that was really needed, lol. From now on, I'm gonna say it like you, I'm not a cake decorator 😅. I'm so sorry for your loss, Debbie. That's so sweet that your sister made your wedding cake 😊❤️
