I was taught to add salt to the eggplant slices and let them sit for 20 minutes, pat them dry with a paper towel to remove the excess water and then fry it. The salt does give it a good taste. Has anyone tasted the difference? I want to know if it’s worth it to save myself from this extra step 🤣🤣

Apart from the taste, salting eggplants or soaking them in salted water helps to getting rid of the bitter taste some eggplant varieties may have. It also is useful when deep frying the eggplants as they do not get too soggy as they soak less of the oil if pre salted. So, it's not a must have step as most of the eggplant varieties are not bitter nowadays, but it definitely is a useful process.

It gives the maqluba a Maggi flavour, so it really depends if you like it or not, sometimes I use it and sometimes I just want the pure flavour of maqluba ❤❤

Before u cook the meat u use a colored Water, what is it in the Water you place over the meat?

Salt, pepper, 4 packets of sazon and mixed spices. These are the spices I put on the meat and I use the same bowl to pour water to make sure that all the spices go in the soup

No, I fry vermicelli first, let them dry on paper towel and then mix with uncooked rice

Looks fantastic! Great job! One question I have (and honestly the one part I am a bit apprehensive about) concerns the mixture (at least the bottom portion) potentially sticking to the pot. Yours came out perfectly clean; may i ask what tips/technique you used to get such a clean release? Thanks!

I put a few sliced tomatoes on the bottom that prevent Maqluba from burning. Also as soon as it boils turn the fire down to low and cook for only 45 minutes.

You can use any pot. It doesn't have to be that specific one. Just make sure to use the pot with the handles (if there any) on the same line with the edges for easy flipping

Just use a serving spoon , and enjoy the sight of its instant demolition!! It might look like a cake , but it is just a rice dish, but a fabulous one for that matter, the pride of the Palestinian cuisine.

My friend who is palestenian's mom used to make this and it was soo good. She made a lot of arabic dishes like cousa mahsi,dolmades and some desserts like cheese and nuts fried in a pie crust and topped with honey. Also ignafa? It was orange and had like shredded wheat and cheese or something.. Yummy. Never had any of it before as a white dude but i miss his moms cooking. I used to make dolma and cousa mahshi a few times when I was single and now with my gf and son she says its ok but doesnt really love it. I want to make it but it would be too much food for just me haha

My 3 boys love my maqluba and will not eat it anywhere else. It all depends on the seasoning. A lot of my American and Russian friends love it too. I suggest you give it a try

I add the seasoning to the meat and after I drop the meat in the pot I pour water in the same bowl which makes the water colored

What’s in the water you pour over the lamb and how much mixed spices and Sazon packets used to season the lamb? I can replace maqlooba spice with Sazon?

I pour the water in the same container I season the meat in. And that is why the water has a little color to it. I can replace Sazon with maqluba spices and add about 1-2 tablespoons of mixed spices.

No I do not add Saffron. I pour the water into the same bowl that I season the meat in. That's what makes the water colored. I only use the seasonings mentioned in the beginning of the video

For how many persons is this pot? Do you only take meat with bones? Are meat cubs (lamp, chicken breast..) okay too?

This meal will feed about 5-7 adults. You can use any kind of meat. I mostly use lamb with bones or chicken

When you're adding the tomatoes to the bottom of the pot with the meat, you begin layering all the ingredients with rice. Is this rice still uncooked or has it been boiled? Because after you added all the rice and meat soup you boiled it again for 45 minutes?

You do not boil the rice prior to layering all the ingredients and adding the meat stock/broth. The 45-minute simmering cooks the rice. 🙂

Yes you can make it with chicken. The instructions and seasoning are the same. Cook the chicken for 15 minutes in a regular pot, not the pressure cooker.

@@Amry97 after I put the meat in the pot I pour water in the same bowl the meat was in to get all the seasoning out and that's the water I use

@@acealgorithm550 when I season the meat in the bowl some is left on the walls. I just pour hot water in the same bowl and add it to the pot.

@@user-qh3ph5ri8p maqluba is a Palestinians meal u all wtf but all arabic country cooks this meal its 100%Palestinians there is mansfi its Jordanian meals for example we didn't take it and say it was Palestinians 🥵🥵and also other Arab countries now did it on other ways but the real recipe is Palestinians go educate ur self

yes. The meat will take about 2 1/2 hours in a regular pot

Yes and use olive oil not corn oil!! Low heat and butter for vermicelli low heat. Also put other veggies and leave out potatoes if you have diabetes.
