Ingredients:
1 kg head cabbage
3 eggs
3 onions
250g grated mozzarella
4-5 cloves of garlic
3 tsp salt
2 tsp thyme
1 tsp caraway
1/2 tsp pepper
150 grams of flour
oil
butter
breadcrumbs
Bake: 200°C / 392°F 35 mins.
Boil 8 minutes
let cool down

The mixture looks like it would also be delicious when formed to patties and fried in a pan, rather than baking it in ramekins. If you're not a vegetarian, also toss in some bacon - it goes exceptionally well with cabbage!

@@philiptownsend4026 pan-frying wouldn't introduce more fat than is needed to butter the ramekins. Whether adding bacon is right for you is up to you alone. For me it would be delicious, but I am not a vegetarian.

6/28/22: Doing it this way is just a variation on a theme, and I think, for experimentation's sake, that I would try it only after I try this recipe in its original form, just to see which way I'd like it best. Thanks for the idea, frofa, but thank you also, Einfache, for setting the tone! I'm making it "E's" way today!

6/30/22: I made this recipe yesterday and it was SO good. I didn't put it in ramekins, but instead, a glass pie pan, and it came out wonderful. It was like cutting into a pie! Nevertheless, I'm gonna also try this same recipe by frying it as patties and let you all know how they came out. Wow...thanks, Einfache. My family loved it!

Looks terrific! I eat Low Carb so I'd substitute the bread crumbs for nut flour & also the flour for almond or coconut flour! Thank you!

@@lt6573 Because it was a pie dish and not ramekins, the mixture seemingly swells up going into one vessel; very plentiful. I baked it (convection style) @ 350 for about 40 mins., checked it and timed it for an additional 5 mins. because I wanted it to be a little browner. Took it out, let it rest for 10-15 mins. or so and dove into it! So good!

I made this a few nights ago. The bowls I bought from Ikea. I chopped the cabbage by hand. It was great, will definitely make it again! 💯

I made these and they turned out really good but I fried them. I didn’t drain my cabbage well enough so be sure to do that! I only used thyme. If you look at the video, she is not using cumin as we know it in US. She is definitely added caraway seed which makes much more sense. Thank you for the video and recipe!

How can you tell the difference between cumin seed and caraway seeds?

They look similar but Caraway is used in German recipes and Cumin is used primarily in Mexican recipes. Plus I’ve never seen a recipe that used whole cumin seed…I’ve only seen it ground.

Yes, I saw that too. In German, the word for caraway is "kuemmel" (pronounced kind of like "kimmel", the u has an umlaut over it) but the titles said cumin by mistake. Putting caraway in cabbage is classic in German cuisine.

Outstanding! I used almond flour in place of the breadcrumbs & flour. Came out AMAZING! Made it in USA with Cumin. Tastes great. I could try the recommended caraway seeds next time. Kitchen was a mess but totally worth it. Thank you.

Good idea, thanks. I simplified the procedure and I used almond flour instead of the regular flour, taste super. Will try Oat or coconut flour also. Btw nice music/song.

Thank you for posting **Healthy!! Budget friendly & Easy.~ Perfect for these times where groceries are getting $$$*. - I would add a side of rice or potatoes (sweet potato has more nutrients) to make a complete filling meal.Maybe there's enough eggs for the protein?. (Or a fried egg on top? I think a can of tuna/a little chopped ham/left over chicken would work in this recipe too) Be frugal & creative. Let stale bread become breadcrumbs... etc. Cabbage is always a fantastic, healthy inexpensive ingredient to have around. I like that it keeps a long time in the fridge too. (just have to trim the dark bits off) *Stay Healthy & Happy Everyone! 😊❣Lots of healthy budget meal ideas around if you look for them!* ~I wish everyone well. Greetings from Canada 🇨🇦

Mine is in the oven now. I'm also keto & used almond flour and added parmesan for 1/2 of the cheese. I also made in a casserole dish & it's baking to a lovely golden brown.

@@thecreativesideofsnuggles6156 Actually next time I'll add some crumbled bacon. It was good but lacking a little . I'll also add some CRP (crushed red pepper) and rather than mozzarella, more parmesan and Asiago.

Maybe someone already mentioned this. Cumin is Kreuzkümmel in German and Caraway seeds is Kümmel in German. The taste of them are much different. Thanks for a good recipe.

Hi there. Thank you very much for sharing this. This recipe and another that is similar has been in my family for generations. The other recipe is exactly what you have done but replacing the cabbage for macaroni, or similar pasta. Apart from that everything is cooked the same with just one other ingredient.....1 heaped teaspoon of English or Dijon mustard goes in with the mix. Once you have put the mixture into the bowls with the breadcrumbs and butter, you then sprinkle some cheese of your choice to just cover the top and then cover with breadcrumbs......we also sometimes use finely crushed Ritz, or similar crackers to go on top of the cheese. With the second pasta recipe, after it has been in the oven for around 30 minutes it is left to cool down completely. It becomes quite solid and can be cut like a cake. It is wonderful with any meat, vegetables or salad. We also do a hot spicy tomato / Tandoori chutney to go with it that really sets it off. Thank you again. I wish I could find the time to share my family recipes like you have on KZfaq. I am constantly being told to open a restaurant by the people I share my food with. Not for me. If I had to do it for commercial reasons I would lose the fun and love of the cooking. I am currently in the middle of writing a recipe book that I will likely give to family, friends and anyone else that wants it for free. There are countless recipes that I would love to share that have been part of my family for generations. It would be a crime to not pass them on. PS. When you get the chance try the same recipe with the pasta replacing the cabbage and finish with the cheese, breadcrumbs, or finely crushed savoury biscuits on top. You can eat it while it is hot but it is so much better when it has completely cooled down and gone solid. Awesome with a salad.

I eat keto diet. This looks delicious! I'll use pulverized pork skins instead of bread crumbs. Wonder if i could use a little xantham gum instead of flour? Definitely going to try it! Love the idea of the patties but might not work so well with all the cheese.

Reminds me of Okinomyaki, popular street food served in Japan. The name stands for "As you like it" and is often called Japanese pizza since it's fried like a pancake and served with whatever people like topped on it like bonito flakes, shrimp, ham, mushrooms, or whatever.

Looks fabulous! Love cabbbage and all the other great ingredients here so will give it a try! I make another great cabbage recipe called "Haluski" made with onions and noodles. Can be made vegetarian without meat or with added sausage or bacon. It's eastern European and a Ukrainian recipe. Thanks for the wonderful recipe!

not to be confused with golubtsi....I had a Slovak wife who made excellent haluski.....now I have a Belarusian wife who makes golubtsi. Once this one gets too old, I think I'll get me a Polish wife as I've always loved Polish food.

I have been on keto now for over three yrs. The first year I lost 125lbs. I have 20 more to lose. I have been staying at the same weight. Always keto just a little bigger helpings

Gayle Jean The Keto lifestyle longterm takes a real commitment but can be done. My sweet high school friend was always heavy, in her early 50’s she went Keto and turned 61 yesterday and looks absolutely fabulous!! The best she’s ever looked. Says she wishes she’d done it sooner.

This dish looks really good, but I must say those were the smallest onions I've ever seen. 😀 They'd be perfect for single dishes.

At first I thought the same thing about the onions then I thought maybe they were shallots. They were small and oval shaped like shallots. Maybe...Sometimes it's just different products available in different parts of the world or sometimes just called something different.

They were regular yellow onions on the smaller side. Most likely out of a 3 lb bag of mixed sizes. Definitely will be fixing me this dish over the holiday weekend.

I buy “perfectly imperfect” vegetables and they often have some very small and large vegetables as well as warped shapes. Most companies will only sell the vegetables that are the most ideal size and shape to consumers and some of the “rejects” get sold to companies that make it into processed foods and the rest get tossed. But it’s perfectly good food, just doesn’t do as well with consumers. But you can buy it at a reduced price and I prefer it that way because I sometimes want a lot of onion in a dish and sometimes just a little so I can use a small onion instead of a half an onion. I also grow lots of vegetables at home and you often get some very small ones in the mix.

That's a pretty cool idea for cabbage but I would spread the mixture out on a buttered baking dish lined with bread crumbs then spread the mixture out and top lightly with buttered crushed saltine crackers, makes a awesome crust

Made this dish today. Not a fan. I don't like the mozzarella in the cabbage. Pan frying cabbage with Vidalia onion, garlic and spices is far better.

I am going to pass this recipe along to a vegetarian friend. I also saw in the comments the use of different flours. That is exceedingly important for her because of leaky gut issues. TY for sharing this simple basic recipe. It can be modified so many ways.

I’m a professional chef, have been working in kitchens for 15 years. You have some amazing technique and the seasonings - although only seen through screen - reek of deliciousness. I’m gonna steal this recipe if you don’t mind, for personal use. Been wanting to get out of the meat aspect and work on vegetarian and vegan stuff. There’s a whole other world out there. 😊

Many thanks for the recipe.. I made it today using what I had in hands (fresh dill and basil leaves, dried oregano). I don't have tyme and caraway. Besides I used mufin pan and I didn't steam the cabbage first. It turned out delicious and I really love it🥰

Great recipe. Seasoning is always a matter of taste, of course. I'd recommend to use soj sauce and take a bit less of salt and leave away the cumin. That tastes wonderful because soj sauce and garbage fits together perfectly.

One cup of cabbage is about 1/3 the daily value of vitamin C, which is equivalent to about one half of an apple. I mean it’s kind of cheap, and it offers fiber? But nutritious might be inaccurate. All vegetables offer nutrition, but cabbage is down near the end of the list

Are you using cumin or caraway seeds? The description and English footnotes suggest cumin (dt.: Kreuzkümmel), the German footnotes suggest caraway seeds (dt.: Kümmel). I'm sure it tastes delicious either way.

I love cabbage. Doesn't matter how it's fixed. Raw, cooked, fried. I will eat it and my hubby hates it. He only eats it in egg rolls. He's weird. 😂

When I'd make rice stir fries. I would sometimes add cabbage to mine. Haven't seen many do that. It's yummy to. Have to say. That looks really good.

We do that too. We add a lot more veges than rice. Cabbage makes the dish! We add whatever meat or seafood leftovers we have as well.

It can easily be scaled down. Buy a small head of cabbage, shred and cook it as described, then split it up into portion size and freeze. Then finish with lower amounts of the other ingredients. I guess the whole mixture can be split before baking, and kept frozen until next time you want to bake a portion.

Just make a smaller portion by half or less of this or any recipe. You can see this is one that can easily be adjusted. Still buy the bigger head, you're paying the same price. Use the rest for something else.

Well that’s a wonderful vegetarian dish. But the eggs are a no no for us, so replace this with thick hung curd 1-2 TBS/egg.
