I’ve worked in the seafood industry for a few years and this is a marlin type fish, the skin gets all tough and wrinkly due to hot climate, the skin is tough like leather and what happens to leather in the heat? Answer: it goes all wrinkly unless it sits in an ice bath!

I disagree with the comments, the fish is fresh because the meat is pink it looks 1000 yrs old because of the skin, it must have been bought 2 to 3 hours before cooking it I guess anyway it's a Rasam kinda gravy so it is watery.... Chill the old guy knows what he is doing and I'm sure he cooks better then each and everyone following him..... ✌

Daddy, please don't prepare fish like this again. I'm not sending any hate, just want you and your community to stay safe. That fish didn't look fresh and the eyes were very cloudy. Made it look rotten. I believe I saw a worm too at 3:21. Please keep cooking, just be cautious! Love your videos.

If you play at 1/4 speed you will see 2 parasitic worms near the cut. The fish may be more fresh than we think as parasitic worms don't live long after the animal dies. Maybe just hot hot hot outside.
