3 kinds of biscuits, 3 kinds of delicious.
Hand rolled biscuits, great for that everyday meal.
Bacon Cheddar biscuits, great for anytime but delicious with soups and stews.
Scooped biscuits, great for breakfast, smothered with sausage gravy.
Hand Rolled (Tami's Biscuits)
Preheat oven to 450 degrees
3 cups self rising flour
1/4 cup shortening
1 cup buttermilk
2 Tbsp melted butter
Add flour to bowl. Make a well in center. Add shortening. Work shortening into flour. Add buttermilk and mix well. At this point, you might want to wash your hands unless you used a spoon. With floured hands, pinch off dough as big or small as you want. Roll between palms until smooth. Place in pan, pat down. Bake 9 minutes, remove from oven, brush with melted butter, bake additional 9 minutes.
Bacon Cheddar (Stephanie's Biscuits)
Preheat oven to 425 degrees
2 3/4 cup self rising flour
1 tsp salt
1 cup butter (2 sticks, cut into cubes, keep cold)
1 cup cheddar cheese, mild, sharp, or mix of both
1/2 cup bacon, crumbled
1 cup buttermilk
2 Tbsp melted butter
Grease pan. Mix flour and salt, cut in butter until pea size. Add buttermilk, mix well. Add bacon and cheese. Stir together. Flour board, roll biscuits with a rolling pin. Fold dough over onto itself, re-roll dough to about 1/2 inch thick, cut out with biscuit cutter, dipping in flour to keep it from sticking. Go straight down and up. Do not twist cutter. Place on greased pan. Brush with melted butter. Bake 12-15 minutes until golden.
Scooped Biscuits (Parkers and Grams)
Preheat oven to 425 degrees
3 cups self rising flour
1 stick butter, cubed and kept cold
1 1/2 cups buttermilk
pinch salt
Stir salt into flour. Cut butter in until pea size. Stir in buttermilk. Dough will look wet. Scoop out with ice cream scoop. Place on pan sprayed with non-stick cooking spray. Bake 15-18 minutes until golden.
Keep in mind, all ovens are different. The baking times given are what worked perfect in my oven.
Enjoy!

I remember watching a fine old Southern lady making biscuits like it was nothing. She would pinch them off and then put them in the pan I guess. I was so mesmerized by the pinching off part that came so easy to her (I guess that was experience) that I don’t remember any more of the process but the eating.

All these biscuits look so yummy…I’m going to try them all for breakfast tomorrow. I like to freeze my stick of butter and then use my box grater to grate it into the flour. So easy to then just add the milk and mix everything. I bake mine in a 500* oven for 10 minutes and butter them when they come out of the oven and cover them with a tea towel for 10-15 minutes. That makes them so soft. My mouth is watering from all of your delicious recipes. Thanks for sharing them!

I cant believe it took me 3 days to finally finish watching this video and write a comment. I kept getting interrupted smh. All those biscuits looked so delicious. I mostly make cornbread at home, but will always order biscuits when we are eating out. To be honest, I have felt intimidated with the biscuit making process and have always been afraid they will come out flat and hard. Watching all three versions inspires me a bit. I might try Parker's version first with tbe butter. 😊 Thank you for the video Karen!! Have a great weekend.

I like you have always struggled in the biscuit making, they always came out flat & hard. The only one I mastered was the bacon cheddar biscuit. I’ve made my moms (the first biscuit in this video) they came out tall, fluffy. I learned hard way that it’s all about adding more fat to the mix, whether it’s butter or crisco. That’s key to fluffy soft biscuits. Parker’s are super good

@@StephanieFoodandFamily Thanks Stephanie. I'm glad I'm not the only one. So adding enough fat to the mix is the trick. I will keep this in mind. Baking anything is always a challenge. They say the devil is in the details. 🤭 I make cranberry bread out of a Betty Crocker Christmas Cookbook I bought decades ago. As the years have passed I have learned how to get it to be fluffier and fluffier. I remember sharing the recipe with a friend and she complained that it didnt turn out like mine. When I started questioning her about how she put it together she admitted to substituting olive oil for the butter. Can you imagine? Of course the bread didnt turn out. We still get a good laugh about that each time we are in the kitchen together. Cooking is an art. We can all learn from each other right? Thank you for baking with your mom and nephew. Your sweet mother in law is a pleasure to watch. 😊

Stephanie is my DIL and Parker is her son, my Granndson. Tami, the first biscuit is her mom. She is more like a daughter to me than an in-law.

Hi there girls.I love that measuring thing she was using for the Crisco.Where did find that?.And if I don't have buttermilk can I use regular milk?.Those Biscuits look great. They are beautiful. 😋.Great family.

www.amazon.com/shop/karenjonesfoodfamily Look at the attached for the measure cup she used. You could use regular milk but you won't get the same delicious results. Would work. But if you don't have buttermilk like me sometimes, use regular milk and add a splash of white vinegar. Let it sit about 5 or so minutes. Good enough buttermilk to cook with. Thank you for watching ❤️

Easiest and fastest way to mix shortening or butter with flour is to use a hand mixer. Works perfectly. Then do the rest by hand.
