This is a re-run and so worth the repeat; however, I love one pot meals, and here is another one to add to your recipe box. Although it is more of a method than a recipe. Follow along with this video, and you will make a delicious pot pie that your family will request over and over again. This pie can be made with chicken, turkey, or even beef. If using beef, just substitute beef broth for the chicken broth. Directions below for pie. Please let us know how you like it.

Directions:
Make rue with equal amounts of fat and flour. I used 1 Tbsp oil, 1 Tbsp butter, and 2 Tbsp flour. Salt & pepper to taste. Add diced onions, I use 1/4 cup. Add frozen vegetables, I used about 1 1/4 cups, and 1 cup of diced ham. Sprinkle in garlic powder, onion powder, and parsley to taste. I used around 1 tsp of garlic and onion powder and 1 Tbsp dried parsley. Add about 2 cups or so of broth. You want it thick but not pasty. Stir until thick and bubbly. Add 1 Tbsp heavy cream. Pour into a prebaked pie crust. I use a 9-inch deep dish and baked at 400 degrees for 10 minutes. Use the second pie crust as the top. Cut slits in top to let steam escape. Crimp edges pinching with fingers or use a fork. Brush a few drops of heavy cream on top crust. Bake 30-40 minutes at 400 degrees until golden brown. Cool a few minutes and enjoy with a side salad or alone.
