Join Chris Morocco in the Bon Appétit Test Kitchen as he makes BA's best lasagna. Why in the world would we tell you to make meatballs, brown them, and then break them into pieces-for a ragù? Sounds crazy, but it’s the best way we found to sear a big batch of meat without overcooking it. This MeatballMethod™ yields deep color (a.k.a. flavor) along with tender meat. If you want to use fresh pasta, go for it, you overachiever you. The original BA recipe required to make the noodles by hand so I passed on it and made Matty Matheson's "Guaranteed To Get You Laid" Lasagna instead. Bomb.

This is just a basic classic lasagna. Making the sauce is like 30 minutes + cooking time. It's not longer than any lasagna recipe unless the only lasagna you make is frozen ones.

BA is a test kitchen so it doesn't really matter, they(or maybe just test kitchen manager Gaby and the cleaners) are the ones who suffer the consequences. But yes the mediocre cooks and the ones who don't run the kitchen are always so dirty. They will use the equipment, make messes and then do half-assed cleaning because they don't think it's worth their time to keep things nice.

I'm one of the people who complained about that! 😂😂 Though, to be fair, it's CFTBATK running her hand through her hair then going straight back to the food that gives me anxiety. Chris was just washing raw food off.

I think this is because chris is a very honest and straightforward guy, he says what is in his mind and is not afraid to correct anyone who is wrong, which may make him seen as arrogant when u first see him. Which is why i think that usually people in BA look for chris for his opinion on their cooking, coz chris would tell it to them straight.

I think it comes down to the way they edit his video's. With people like Claire and Brad they leave in a lot of the goofs and extend scenes beyond just the cooking. With Chris they would always just cut for recipe and instruction. It's clear in certain parts of this that they've started keeping longer segments of him. If you watch the april fools video with Chris and Brad you can see he's just as much of an awesome funny person as the rest of them. Big fan of Morocco and all the BA test kitchen "cast".

Fluffs McScrubb I can confirm. We still feel that it’s hot but after a while you lose some feeling in your hand like when peeling a hot potato 😂

The secret is to lick your finger, so that the saliva forms a protective layer. Then you quickly lick your finger again to taste it. It isn’t really about how hot something is, it is about how muchness is transferred onto your skin. Think about holing a sparkler in your hand. You can usually do this with sparks hitting your skin, without burning yourself, even though the sparks can be as hot as 3000°F. This is because the individual sparks are so small that they are already extinguished before enough of that heat is transferred to your skin. Also, as a chef, it isn’t so much that we don’t burn ourselves, often it is more a matter of just accepting that a certain amount of pain will happen during your working week.

@@nic558 A lot of the, "Ouchy hot!" reaction most people have is in the brain, and not an actual reflection of serious physical harm. Those reaction can be trained to more accurately reflect what is and is not actually harmful to you.

I think the kitchen is basically like an office and every station is like a cubicle. Yeah there are moments around the water cooler or the snack station but they all have print deadlines to meet.

I’ve always had a real interest for the more scientific aspects of cooking, like molecular structure etc. I LOOOOVE the way Bon appetite gives you a little of that explanation and understanding. Chris explaining why he adds the oil, then wine, then tomato juice, then tomato 👌🏻👌🏻👌🏻 YES
