Machh'er kalia recipe: Kalia and qorma are the two pillars of Mughlai cuisine. Qorma has a base of ghee-water even if it is added for cooking is eventually dried off. Kalia, in contrast, is water- or milk-based and the final dish is runnier. Qorma is for special occasions, while kalia is more of an everyday preparation. Of course, this kalia, and other Bengali kalias, are heavily modified from the original Mughal kalia-which were not as fiery. These probably developed under the Nawabs of Bengal incorporating local ingredients and tastes.
This machh'er kalia is made with paka (mature, i.e. 3 kg or more) rui or katla-both of which are freshwater carps very popular in Bengal. It is best if you can buy a live katla weighing 3-4 kg and cook it the same day. Our recipe is moderately high on chillies which is nicely counterbalanced by the sourness of the yoghurt and tomatoes, as well as the sweetness from the fried onions, sugar and raisins. You may even add fried potatoes to the gravy if you prefer. Serve this with plain boiled rice or with a polao (link below).

Being a professional Chef for 20 years, not a Bengali, but a big fan of Bengali cuisine, music and culture. I think this is one of the best vlog i have come across. Kudos to the people behind this channel. Wish I can know them and contribute. As far as the measurement part goes, invest in a good kitchen scale and a good recipe book, its worth it. Professionally it is recommended to record the recipes only in grams or Kgs, as conversion is easy and it is more consistent.

আমি অজয়। সুইডেন এর স্টকহোম শহর থেকে বলছি। আপনাদের রেসিপি গুলো হচ্ছে আমার সিক্রেট উইপেন। পুজোয় বাড়িতে বন্ধুদের ডেকে আপনাদের রেসিপি গুলো থেকে চিংড়ীর মালাইকারি, ফিশ ফ্রাই , ডিমের ডেভিল করে খাইয়েছি। পুরো শহরে হৈ হৈ পরে গেছে। পরে ভাবলাম, যাদের কল্যানে এত কিছু, একটা ধন্যবাদ তো দিতেই হয়। থ্যাংকস, অনেক অনেক থ্যাংকস। এইভাবেই করে যান। # Bong Eats

Everything is so satisfying in this video the cutting the grinding frying sprinkiling the spices the cluttering of the fish when it hit backs the pan the peeling of the onions the low soft bengali music which plays in the background the colours and finally the end result this is what a perfect world looks like.

I just started cooking a month ago and your videos have genuinely helped me out quite a lot. The fact that you give reasons as to why you add certain ingredients, for the case of this video it's the sugar to darken the colour, really helps beginner level people like myself to further understand the science. আপনারদের রান্না যত দেখছি তত অবাক হচ্ছি। কোনো কথা না বলেও কি চমৎকার পরিশীলিত প্রাঞ্জল উপস্থাপনা। আমি নিজেও বাঙালি রান্নার অনেক বড় ভক্ত। রান্না করার নেশা আছে। আপনাদের রান্না দেখে আরও উৎসাহ পাচ্ছি। দাদা কলকাতার ওখানে আপনারা চটপটি কিংবা ফুচকা কিভাবে বানান? একটি ভিডিও করলে খুব খুশি হব।

I made this last week and the gravy was oh so delish. I think this gravy can also be used for a good chicken curry. Thank you Bong Eats. I'm a die hard fan of Bengali cuisine.

Excellent.. will try this kalia with tomato .. we need to cook modern kalia with tomato as a departure from old tradition . While sticking to old traditional dishes we must explore new ways and u are a pioneer
