Hey hey loves!!! It’s been a while and I’m so happy to be back. Today I’m bringing you guys one of my favorite fancy breakfasts and some fun bookish talk. I hope you all enjoy and I’ll see you in the next one!

Croissant French Toast:
4 large croissants
2 cups half & half
2 large eggs
2 tsps vanilla extract
2 tbsp sugar
2 tsps cinnamon
Cut croissants in half and set aside. Combine half & half, eggs, vanilla, sugar, and cinnamon. Set aside. Bring skillet to medium heat with 1-2 tablespoons of unsalted butter. In batches, dip croissant halves into mixture until saturated and lay in pan cut side down. Allow to cook until golden brown and flip. Once cooked through, plate and serve.
Blueberry Syrup:
1 cup granulated sugar
2 tbsp cornstarch
1 cup water
2 cups frozen blueberries
Juice of 1 lemon
In a cold saucepan combine sugar and cornstarch. Add water and stir until combined. Add frozen blueberries and stir. Heat mixture and bring to a boil. Reduce to simmer and allow to thicken. Remove from heat and add lemon juice. Serve warm over your favorite breakfast items. Store in fridge for up to 1 week or longer in the freezer.
Whipped Cream:
1 1/2 cups cold heavy whipping cream
1/2 cup powdered sugar
2 tsps vanilla extract
Combine ingredients in a medium sized bowl. Using and electric mixture beat on high until mixture thickens and forms stiff peaks. Don’t over-beat!
