funnily enough sharpening tools is like that. So long as you get a consistent angle and flat sharp edge you did well - many ways to get there... back and forth, across, circles.

The bit of advice that really helped me here was the amount of pressure to use. I’ve tried so many times to sharpen my Wusthof chef’s knife, and even though I’ve had decent results with the cheap Mercer I bought to practice on, I could never get the edge to take on the Wusthof. Turns out what I thought was decent pressure was just two or three pounds once I checked with a scale! Gave it another go and now it’s back in service. Thanks Brad!

Thanks for explaining this in such an easy to follow way, knife sharpening always intimidated me for some reason but the way Brad demonstrated and talked through each step has made it seem way more enjoyable!

As an European it is really surprising how many people in USA can't drive stick shift... I mean... it is not that hard to be honest. I drove a stick shift car on my first day ever driving within just a few minutes practise.

I’m currently in culinary school and we have a chef professor who’s crazy good at knife sharpening and I would always just watch him in awe at what he was doing. Now I understand all of it. Definitely makes me want to invest some stones!☺️

I always hone before I sharpen; stropping is something I've never thought to do on my kitchen knives, and I don't know why I haven't, thanks for the tip!

@@HurrikanEagle he's got an apron on. Makes it a little more safe. That rule is more for if youre cutting something, in case you slip up.

been cut while sharpening before, it's usually better you to edge trailing sharpening so you're less likely to gouge your stone. sharpening towards yourself isn't a huge risk so long as you have the proper grip. and don't have any digits where they can be cut.

They read my mind all the time. Once I made a butter-basted steak with fennel salad, and they released Carla's recipe video the next day. Another time I was thinking about trying to make empanadas sometime and they released Gaby's empanada video the next day.

Very informative. I get intimidated even thinking about having to sharpen my knives. Brad describing the angle to hold the knife against the stone was great. the easiest way to know that ur angle doesnt change when sharpening is to listen. if the sound pitch doesnt change, that usually means that ur angle is the same. sorry for bad english
