这一期介绍大家煮这一道豉汁苦瓜鸡 去试试吧 真的好吃
所需材料:
苦瓜
鸡全腿肉
黑豆豉
小葱头
小辣椒
青葱
蒜米
生姜
调味料:
蚝油
豆酱
生抽
晒油
胡椒粉
白糖
绍兴酒
Ingredients (Diana Aw)
1. Chicken drumstick, cut smaller and rinse with water. If use frozen chicken, soak in water for 10min. Drain dry. Marinate with little salt and pepper, one cap of Shaoxing wine. Then add little tapioca flour and mix. Lastly add little fragrant oil/sesame oil and mix well.
2. Bitter gourd xhalf, remove seeds and cut into 4 long strips, then slice diagonally (not too thin). Place in a container and mix with little salt. Mix and set aside for 15min. Rinse with water and drain dry.
3. Fermented black bean, 1/2 tbsp. Chopped smaller
4. Shallots 3 cloves, minced
5. Garlic 2 cloves, minced
6. Ginger small piece, minced
7. Chilli padi 1pc, diced
Seasoning
1. Salted bean paste 1/2tsp
2. Oyster sauce 1tsp
3. Light soya sauce 1tbsp
4. Sugar little
5. Pepper little
6. Potato starch solution
7. Dark soya sauce little
8. Sesame oil little
Method
1. Heat wok with oil and sauté the chicken till aromatic and oil extracted. Set aside
2. With the balance oil, add in ingredients 5-7 and stir fry till aromatic. Add in salted bean paste and oyster sauce and continue to cook.
3. Then add in chick and bitter gourd and stir fry. Add some Shaoxing wine around the wok and mix well. Then add water and bring to boil. Cover and simmer for 2min
4. Add sugar and pepper and mix well
5. Add potato starch solution and mix well. Add dark soya sauce and mix well. Lastly add little sesame oil and mix.
6. Serve and enjoy! 💕

苦瓜,是孩子们不太喜欢的一道菜,阿鸿厨房的食谱,孩子们竟然加饭🫣,连汁都清碗,这个苦瓜的煮法,能减少苦涩,再配上食谱里的配料,绝。。。对是个赞❤

Ingredients: 1 chicken maryland 1 Bitter melon Sauce (minced): Chopped black beans ( refer to the video for quantity) 2-3 small red onions 2 garlics Ginger (refer to the video for quantity) 1-2 Bird- Eye chilis (optional) Method: A) marinate chicken with salt and pepper and shaoxing wine, little corn flour, sesame oil B) rub salt on b.melon then rinse off after 15 minutes C) fry chicken then set aside D) fry sauce with low heat, add 1/2 tsp soy bean sauce, 1 tsp oyster sauce then add (C) and b.melon E) sprinkle rice/shaoxing wine then add water, little soy sauce (not too much as black beans are quite salty). Cook for 2 mins then sprinkle some white pepper, little sugar and sesame oil. Thicken the gravy with corn starch.
