BRAZO DE MERCEDES
✔️Meringue
10 egg whites [arge size]
1/4 tsp cream of tartar [1 gram]
1/2 cup sugar [100 grams]
✔️Filling
10 egg yolks [large size]
1/2 tsp vanilla extract [2.5 ml]
1 can sweetened condensed milk [300 ml]
•Rectangle Baking Pan size: 16 inch (length) x 12 inch (width) x 0.75 inch (depth)
•Bake the meringue in a preheated oven @ 170 C for 30-40 mins. or until brownish top.
•Baking time & temperature may vary on the type & function of the oven. I used conventional oven with bottom heat function only.
•For oven with dual (bottom+top) heat function, it tends to bake faster so reduce the specified baking time accordingly.
✏️TIPS TO AVOID A FAIL MERINGUE
1. Use fresh egg whites (room temp.)
2. Use clean and dry stainless, copper or glass mixing bowls only. Avoid aluminum and plastic mixing bowls as it could contain traces of fat/grease that can prevent the meringue from stiffening up.
3. Never let any yolk, water or any residue into the egg whites.
4. Do not over beat the egg whites.
5. Avoid beating the egg whites at high speed.

hi, di ko po alam ang secret sa mga branded brazo de mercedes kung pano nila mamaintain ang shape at texture since factory processed npo ang mga ganun & maybe may stabilizers sila na ginagamit. One factor nagdedeflate po sya sa sudden change of temperature , to help na di mag weep out or mag liquify ang sugar, you can cover it with wax paper, then store in a cake box or container with lid then store in a cool dry place. Another hack po (just like sa donuts), is to add cornstarch to the sugar para maprolong ung dryness ng sugar.

Hello anong settings po ang gamit sa oven na heat? Top and bottom po ba or bottom heat lang. Thank you.

170C or 338F for 20-30 minutes. If your oven is bottom heat only use the setting I just mentioned but if you have a dual oven(bottom and top heat) make the time lesser as long as it gets brown enough like in the video

Any tips for making it easier to peel the parchment paper off? It sticks and doesn't peel off cleanly. =(
