Dear I made similar recipe by following a local you-tuber method and didn't drain vegetables also didn't boil vegetables in vinegar and salt solution with spices, I just boiled for 1 or 2 minutes salt , little water and vinegar with spices and poured it over vegetables in jar and kept jar on room temperature without water bath canning for 3 days and after this I tasted and taste was so good so i stored in refrigerator and recipe says it is good to go for months in refrigerator, MY QUESTION IS .... IS MY METHOD SAFE? secondly....... Is your or mine pickle has good probiotic properties? Thirdly...... Can i use natural crystal pink salt in all types of pickles? PLEASE PLEASE PLEASE REPLY .

@@syedaanjum896 if you poured the vinegar solution over the pickling cucumbers while it was hot then no most likely it filled off the beneficial bacteria. To do lactobacillus fermenting you use a salt water brine solution and you don't boil it you put it in a place out of direct sunlight for a week or two until it's the desired sourness.

Your family is so lucky that you love to can and bake. What a great fragrance your home must emit. Thank you for sharing your skills with us. I want to go back when I get the proper supplies and the food is grown and ready for the new growing season. These pickles look wonderful. I had a great grandmother who loved to can and when young enjoyed such great recipies, but she was gone when I was grown and we did not get her teaching and recipes. So this is like reliving a great time.

Mmmm. I was very fortunate to have my great grandparents until I was 17 & (grandma) 21 (grandpa). I fell in love with bread n butter pickles. ❤ One thing I loved doing was holding a jar of those pickles like it was a snow-globe. I was amazed at all of those spices inside. I once asked what those long sticks were. Grandma told me, 'cinnamon.' Yes! That never overwhelmed the overall flavor. Y'all should try it with 1-2 jars. Very difficult to explain the overall flavor. I'm so happy you made this video. 😃 Thank you.

Ms. Mary, Thank you so much for this recipe. I just tried it, but with a twist to make it a KETO recipe. For every 1 cup of sugar, I used 3/4 cup Allulose and 1/4 cup Erythritol. I cannot believe how delicious they are and as a diabetic, these are now a sweet pickle I can enjoy. Thank you so much! Also, you were exactly right, I got 6 pints out of the recipe with a 1/2 pint of syrup left, which I also canned! Your videos have encouraged me to can and I'm so happy that I found you last year!

Thank you for such a viewer friendly video! Your instructions are so clear and uncomplicated that anyone could make bread and butter pickles. I am going to try this recipe soon. I made bread and butter pickles years ago and the shelf life was 1 year. It is awesome that you share alternatives in your instructions.

I really love traditional foods all the world. It's really delightful to watch ladies make traditional foods with nuisances. In India we make pickles with turmeric powder, we add turmeric powder in almost everything. The pickle looks yummy.

Hi Mary! I adore you and your positive, pleasant vibe. I decided to not include the liquid (as I had previous pickles which were too salty). Can I use this liquid for anything (i.e. to make vinegar)? I thoroughly rinsed the cukes/onions before putting them in the brine/pot. Also I reduced the sugar to one cup. I added garlic, thai and lemon basil, and lots of spices. They were delicious! Thank you for sharing your wealth of knowledge! 😘

Such good information. Had to smile as you described how to make a rack using canning bands. Wanted to can just a few jars the other day so was using my stockpot but didn’t have a rack to fit. Your other demonstration of making one popped into my mind. Got the rings and some twist ties out and said, ‘Thank you, Mary!’ Great tutorial on these pickles.

Hi Mary, I canned these bread and butter pickles today. Used my own from my garden. I only had 3 lbs. approx. I used half pint jars. Also had a little left over. Yum. I'll have to go to a farmer's market for more cucumbers. Thank you.

Thanks for being so clear and descriptive! Growing up, my grandma and great aunt would do a lot of canning every summer and I would help them. However, I never really learned the basics. Now as an adult, I’ve been wanting to can but I’ve been too nervous about doing it correctly. This video helped tremendously! I now feel confident about water canning! I have 6 cucumber plants so I am making half batches. Today I am making my second batch of these. I have made two half batches of the dill pickles, too. This batch should give me a dozen jars total. But, my family already finished a jar of the dills. Thank you so much for making these videos. I watch them as I make the pickles even though I wrote it all down.

So nice of you to mention all those fellow KZfaq folks! I am a subscriber to all! How do you get the white film off of jars? I purchased some used ones and many have this film that doesn't wash off. Thanks for being so thorough and friendly! Blessings from Ohio.

Hi Pam, Thank you so much for visiting and that’s a great question. The white film is usually caused by a buildup of minerals that can develop from the water. The best way to try to get it off is using a paste made with vinegar and baking soda. Give the jars a good scrub, let them sit for a bit, and then rinse them well. If that doesn’t work you might need something stronger like a product sold at the grocery store called “lime away” or “CLR”. Either of those products will definitely do the trick. Hope this helps. Thanks for explaining the finger tight water bath. My concern was finger tight would allow water to get in as well as air escaping. Now it makes more sense. Thank you

GREAT TIP on saving onion skins and bits (after slicing) for bone broth. I guess that would also apply to the butt ends of celery and carrots that I cut off, as well as garlic skins. I generally keep a gallon Ziploc bag in the freezer and toss in chicken bones until I can collect enough for broth. Now I'll start tossing in veggie bits. Thanks Mary!

I find you really try explaining every exact detail which is fantastic could I add I liked about your salt suggestion to each to own regarding salt as each own there own taste buds however when I traveled USA 🇺🇸 I found everything to salty and to sweet so yes I do think comes down to personal taste buds.

I did skip the water bath parts. I might try to make these before my next big family get together, but in maybe 1/4 the amount you used. I think 2 jars at a time would be plenty for me, since I go through spells where I don't like pickles, then I might eat 1/3 of a jar in a single sitting. I suppose I could share them with neighbors if I made it clear they would have to be in the fridge and probably would go soft after 6 months. I appreciate you didn't add the extra chemical to keep them crisp. Yea, if we get together for Labor Day, I will want to make these for that. Maybe some of your other pickled veg, too. It would make for a very nice change! My brother and his wife host the get togethers, but they aren't very creative when it comes to cooking. Last family day we had, I took a desert and most of it got thrown away because pretty much everyone brought deserts. Even burgers and bbq chicken can handle a wider variety of veg than corn on the cob or green beans. Okay, there were tomatoes and lettuce and such for the burgers, but nothing very interesting.

Thank you for sharing I am from Iraq We made sour sauce called Aamba It is made of : 1tbsp fenugreek powder 1tsp turmeric powder 1tsp citric acid 1tsp salt Add 1 cup of water and 1/2 cup of Vinegar to all a dry ingredients U gonna love Iraqi Aamba as we name it.

Thank you Mary. I lost my recipe and this is the same that I use to have. How ever I wanted to tell you I use to eat them on peanut butter sandwich. That was the only way to get peanut butter down me. Hahaha that's an okie for you.

Hi Mary, I and other family members are trying to do low carb. We love bread and butter pickles. Would you advise using stevia instead of sugar for this recipe. They really look delicious and I would love to try them. Thanks!

Definitely. Start with a quarter teaspoon of liquid Stevia and give it a taste. Then, work your way up to half a teaspoon of liquid Stevia. Hope it gives you a nice taste. Love, Mary❤️🤗❤️

What a great tutorial and I love your fancy ladle! and the jar lifter is a first class specimen :) as for the recipe I will pass, I never got used to the overly sweet American taste, so I stick to my lactofermented pickles, sugar free, not sweet and good for the gut, but that's me!

@@MarysNest my hubby would eat them too, but he eats so little of this stuff that it is not worth making. Depending on my cucumber harvest this year, I might make him one small jar, just refrigerate it - it will either be eaten in 2 sittings or last until next year (he forgets it's in the fridge).

To cut down on the sugar you can also substitute with honey. My grandmother taught me that. Her pickles are the best.

@@MarysNest can you use monk fruit sugar? Not sure it that would work the same. With my husband going through cancer treatment, he is craving bread and butter pickles but I don't like him having so much sugar. Looking for alternatives.

@@jeanhurley8221 for a large stockpot I use about 48 ounces of honey which, is about 6 cups. I usually add 2 cups take the brooth and add a cup at a time until I like the flavor. Instead of using water I use veggie broth.

Great question!! I generally store them in my “extended” pantry...a hall closet near my kitchen where I keep my food storage. This keeps them out of direct sunlight and at a relatively constant room temperature which is always best for canned foods as they do not like fluctuations in temperature...but it also keeps them handy for when I need them. Mary, say I make homemade cucumber vinegar....can I use that as my brine for the next pickle batch instead of the white vinegar? I'm making your strawberry vinegar now, I am so glad I found your channel, you are the greatest!

Love, Mary❤️🤗❤️ PS… But if you do use that vinegar, I think you might have to refrigerate your pickles as opposed to canning them because Canning has very specific rules on what type of vinegar is needed to be used to guarantee shelf stability. Most canning recipes will recommend using white vinegar that is store-bought that has a 5% or 9% acidity level. With homemade vinegar we can’t 100% guarantee what were using. Hope this helps.

Hi Mary I enjoy watching your videos and I have learned so much . My pickling cukes are coming in slow and maybe just enough for a jar or two every several days so could I make up my jars and keep them in the fridge until I have enough to fill my canner and then can them ? Thank you

Great video! Can I use pink Himalayan sea salt for my bread and butter pickles? I am about to make them, and that's what I have. It lists just "salt" for ingredients. Thanks.

what happens if you go less then the head space? nothing, right. It will just be lower? I am just learning how to can and I really want to learn how to do regular spicing pickles. I think you are so thorough and so easy to follow. Thank you.

Hi Pam, Great question. The problem is, that if you go lower than the appropriate headspace for the water bath canning time, all of the air may not completely escape. So when you remove the jars from the water bath canner and you hear the ping, the jars have sealed but there still may be some air in the jars. It’s hard to know exactly but that is why these headspace and canning times have been developed by the national center for home food preservation who have tested all of this. Hope this helps.
