Hi! I'm Lindsey, a wife and mother to two sweet and crazy kiddos. I homeschool the kids, grow a garden or two, take care of my goats, chickens, dogs and a cat, and lately I've been working on finishing up building our house. That's right, my husband and I built our 576 sqft house with our own hands and it is nearly done…for now. We'd love to have you join us on our journey of a life lived simply.

This will be my first year ever trying to can cucumbers to make a Gerkin type pickle. I have read about 20 recipes and yours seems to be the easiest! I don't want "coin pickles" so I have quartered lengthwise adding both onion and red and orange peppers for colour. Thanks for this video!!!

Enjoyed watching you can the pickles. I don't do any canning. I have a great icebox pickle recipe from my mom. They are easy to make and they last quite awhile in the refrigerator (that is if I can keep my husband out of them). I made a quart last week (from cucumbers from a farmer's market), but they are gone already. We planted cucumbers in our first garden in Georgia and they are about 1 inch long. Our garden is a baby garden compared to all that you grow. Today is our first anniversary in our little forever home in a woods on the mountain. God bless you and your family.

Thank you for sharing sweet lady. I made a run with your recipe just a bit ago but they didn't last very long. I'm back to write it down this time. I just had a good pick and pulled them out of a lime soak a few minutes ago and I'll be running them in a few hours. Doing lime to avoid salt that I need to stay away from. Sure nuff is a great recipe! The onions and peppers are just as tasty as the cucumbers are. Thanks again!

I have half tested the cutting the ends off theory because I read that it is only the stem end that should be cut off, so that is what I do and haven't had a problem, however, I always make dill pickles for burgers and eating, but will try these. My wife is an organizer, only problem is, she organizes differently each time so I can rarely find anything, but I know Amazon, so now we have at least 6 funnels so I can always find one.

Actually, Bread & Butter pickles predate the Depression. Around the turn of the century (1900) there was a cucumber farmer in Illinois who was trying to figure out what to do with the cucumbers that no one would buy because they were misshapen. His wife said why don't we make pickles out of them and pulled out her Mother's pickle recipe. They made a batch and took it to the local grocery store and traded the pickles for ... you guessed it ... Bread & Butter ... Hence the name. B&B pickles became the first American food rage. By the end of the 1920s if you did not have B&B pickles on your dinner table you did not have a well-set table. On a fun note, B&B pickles are one of the few true American pickles. Unlike most of our pickles, they never existed in Europe. I don't think there is a "wrong" recipe for B&B pickles. When I started making mine I asked my Mom for the recipe she always used when I was a kid. She sent me that recipe plus all of my Aunt's various recipes. I ended up having to put together a spreadsheet of ingredients and make my B&B pickles out of the most common ingredients. I add red serrano peppers from my garden.

Bread and butter are my favorite pickles! I use bout the same recipe except mine are sugar free using splenda in place of sugar, mustard seed and celery seed. NO hot peppers for me! Lol....I've also made them in the microwave when I wanted a quick batch for the fridge. I think it was 4 cukes to make 1 quart. I was skeptical first time I tried the microwave but, it worked! My recipe did call for the salting process, which does help them stay crisp. But it also called for putting the cucumber and onion slices into the brine before putting them into the brine. And a canning funnel helps a lot in filling the jars.

If there is still a Kroger store near you, they have the BEST Sweet & Hot pickles - they are made exactly like the bread and butter pickles, but they add a hot pepper (I think they are serrano) to each jar. So good if you can't make them yourself. Kroger is the only brand I found that makes them that way.

I'm new at this, is a water back canner the same as a pressure canner? I bought a pressure canner but don't have what you have. Do I need to buy that? Or can I use my pressure canner? PS new subber 😊
@CandyIsCanning
@CandyIsCanning 11 ай бұрын
She is saying "water bath canner." That is basically just a big pot to boil water in. Certain foods like pickles (because of the vinegar), tomatoes, and peaches have enough acid in them that they do not have to be pressure cooked to keep mold spores from growing. You just have to submerge the jars completely in boiling water for the given amount of time (in this recipe, 10 minutes). You can use your pressure canner to do it, but you don't need to seal it and wait for the pressure to build up.

It will seal, those pickles that don’t make a full jar get water bathed with the rest but after it’s over they don’t go in the cupboard with the full jars... they go in the fridge.

Are these regular cucumbers or smaller pickling cucumbers you are using?

These are pickles from my garden. Some are larger but the smaller ones make the crunchiest pickles.

Could this recipe be used to make a sweet relish? We have some cucumbers that didn’t get harvested soon enough and have turned yellow. I want to try to use them in some way.

I've never tried it that way but the flavor would make a delicious relish. I would give it a try.

I want to make my own so bad because I love these pickles and I buy them from a company and they are outrageously expensive but their flavor is so good and they’re completely different than anything that’s on the market why do all of the brands taste different like there is a different taste to them and how do you get the taste rate for yourself is it how much spice you put in a of a certain spice I mean do you put more some thing is that how they do that I’m just trying to figure it out because I really want to try this myself and I do have the 8 quart instant pot and I see a lot of people canning with that is that a good idea or bad idea because I Live on disability so I don’t want to go buy more stuff if I can just use the instant pot but a lot of people swear by it I just wanted to get your opinion thank you ,OK forget the instant pot I was just watching some videos and I finally caught onto this water boiling I didn’t know that you put it all together and put it in the boiling water and that seals it I didn’t know you could do that I thought canning was this hard scientific thing that you had to do that’s why I never did it I didn’t know that you could water boil canning I’ll probably not saying it right but you know what I mean but still trying to figure out the different taste in all the bread and pickles because every company in the stores they all have different taste if anyone could help me out appreciate it
