all the respect in the world to the line cooks of the planet. i did 25 yrs in all kinds of places from the bottom to the top and this just got my adrenaline going lol i am too done with that life. i quit smoking, drink only beer and puff weed these days. got a cushy gig running a cafe in a little hotel. this shit is like watching an action movie to me. those guys are what every restaurant wants on the line: only necessary talk, hustle, coordination and quality food. big up to them!

No sir. It's about efficiency across the board. You have to have the whole kitchen and its elements from where the wire wisk and the half-and-half is located mapped out in your minds eye. Where you can basically navigate where everything's at blindfolded. Food prep is 80-90% of the work. The rest is just execution.
