I think I watched almost every videos about brewing with a chemex on YT and I must say that this is probably the best one to date. The setting, lighting, camera angles and explanations are on point - the man is an amazing teacher! And it is one of the rare tutorials which addresses the issue we may have with the deep cone shape of the Chemex that causes some kind of "clogging" at times - changing the circle pouring to a centered pouring is brilliant! Anyway, thank you so much for this video, it is REALLY helpful. :-)

Thank you so much! Every other vid mentions the whole brew taking 4 min and mine is always around 6, this cleared the reasons and adjusted my pour technique. Great vid!

Had mine for over a year and use it almost every day. If you want a clean and easy to drink cup of coffee you really can't go wrong with the Chemex.

Awesome video! Don't really see too many videos on larger volume pour overs. I used a 1Zpresso JX manual grinder with 2.5 rotations or 75 clicks from 0. It came out really nice. The tip about the more coarse grinds was really helpful. I think mine may have drawn down too quickly but it's way better than my previous attempts that took forever to draw down. I also used a stainless steel filter.

I'm thinking about buying buying a Chemex because my ninja coffee bar is on the fritz, but I was confused on how it worked. Seems pretty simple, Great video 👍

I see that you’re using the Fellow Stagg EKG and the Fellow Joey ceramic mug. Any recommendations for grind settings on the Fellow Ode for your exact setup? I’ve been battling a “is that bitter or sour?” Issue at a 2-3 setting on the Ode with large batch Chemex brews. Also, what was your water temp on the Stagg EKG?

i use mostly light roasted coffee, what would be the ideal brewing temperature for most of your video tutorials aeropress,chemex,v60 and kalita. ive done about 208 but i'm not sure if thats hot or too hot. any suggestion would be greatly appreciated. love onyx! posting the same comment on most of your videos so i can hopefully get an answer, thanks so much

Excellent video! I follow these times for 40-50gm of coffee using 1:16 ratio. Would you recommend a shorter brew time for less coffee, say between 30-35gm? I use an 8 cup chemex. Thanks again!

For 30-35g less you should lose close to 2m of total brew time. A 25g dose, for example, should drain under 4m. You'll find less body and sweetness in Chemex brews under 30g vs their larger counterparts. Due in part to the size of brewer and its large paper filter, that's the primary reason our recommended recipe is so large.

What an amazing teacher are you ? ...Beautiful video packed with ton of info . Which is better 3 cup or 5 cup Chemex for 20 grams of coffee. The 3 cup looks very steep and can it over extract due to deeper bed depth ?

Thank you! We enjoy the larger Chemex with larger recipes. The 3cup is very steep and deep, like you pointed out. We prefer methods like the Kalita or V60 for single cup brewers.

@@OnyxCoffeeLab I have been struggling with chemex taste for such a long time. I have purchased another grinder and constantly adjust to find a pleasing cup of coffee. Your explanation about the dosage may be exactly my issue. I am only using 18g of coffee. I am going to pick up a v60!

Would you recommend an adjustment to the timing of each pour if one were to scale down the amount of coffee brewed? (e.g. 500g instead of 900g)

I do it by appearance per pour and I don't over obsess about timing. For me, for my 640 ml pour over 40 grams of coffee, about six minutes total time is perfect. I think the most important things are consistent grinds and correct water temperature.

I do single cups, so 300 or so grams of water, and it usually takes me 3-4 minutes.

Dumb question- the schematics say to pour 110g for the bloom but on the far right it says 100g total should that be 110, then you pour 90g to get to 200g?

It looks to be the Stagg EKG Electric Pour-Over Kettle. Be forewarned, those things are crazy expensive.

What about when you make a different size or single serving? Do you keep the same number of pours and just adjust the amount of water per pour or keep the same amount of water per pour and decrease the number of pours?

It depends on the size of your Chemex. We don't traditionally recommend single cup recipes in 6-10 cup Chemex. The filter and brewer are so large it takes a lot of the flavor out. But, you could apply the doses and pouring structure from our Kalita recipe for a single cup in your Chemex.

We just recently brewed at 6 for an Ethiopian coffee. That should be a good starting point.

Could you clarify the "bubbles"? Are they occurring in the brew bed during the brew? Or are they just sitting on top of your coffee? Thanks!

Interesting. Bubbles are caused by oils in your coffee. That's what makes up the crema in your espresso. If you find the cup or bubbles unpleasant, it could be caused by a darker (more oily) coffee, or your ratio is too tight (too much coffee). The chemex is so tall, this can also increase the infusion of gas into oils (from the drop). But, if its not unpleasant, its not a sign that anything is off with your brew.

Love you ONYX and love this recipe but it’s so frustrating how every chemex video seems to have the Kettle like Mary Poppins purse! I have the same EKG Kettle and there’s no way I can get 900grams of water and a poor to rinse my filter without refilling as well as filling over the Max line.

We're actually just really good at filling our kettles. But, for real, we did refill before starting the video. Heat loss in your Chemex isn't going to be a big deal with a recipe of this size, but the wait to reheat can be annoying.

@@OnyxCoffeeLab Thank you for this. I did my very first pour overs this morning using my new Chemex and EKG kettle. The first time I had the same issue as the OP where I ran out of water by the end (it still tasted good though). When doing the next, I thought "Why not just top it off after the filter rinse? The kettle heats up fast." Glad to know I was on the right track.

Every encore is slightly different, but probably 20 or 21.

Really close. We start at 22 for the Encore. Adjusting more fine or coarse based on the coffee meeting the target drain time.

Standard temps should range from 195F - 208F. We recommend and use 205F water for our cafes!

can someone tell me why i shouldnt pour the coffee into a an old french press container (no filter) and let it steep for 4 mins then pouring that into the chemex filter... attempting to get strong coffee that isnt too bitter, and really cant stand sour... thanks! also, lets be honest... i want 90% of the results with 1% of the effort... lol.. meaning, french press with the filter is a pain for me to clean, so nixed fp.... and my coffee comes out suuuper weak if i impatiently make it in the chemex... need to like...do other things while this process is happening.. thanks!!!!
