I'm making a single ingredient bubble sugar tuile garnish in today's video. You can leave the tuiles clear, cook them a bit more so they are caramelized or add colour. I like to use them to add height to desserts because they look super pretty.
You seriously will not believe how easy this garnish is to make, it's one ingredient, glucose. Simply spread the glucose in a thin layer onto a silpat and bake at 300 F for about 30 min to an hour. This is a big difference but really depends on your oven and how quickly it cooks. Oddly the oven at the restaurant takes longer to cook these than my home oven does. So my advice is to just keep checking on the sugar and making sure it's not burning or over cooking.
Garnishes like these are really good to have in your repertoire because they can be pretty rapidly whipped up if you're ever in a pinch. Also they just look super cool.

You should be able to yes! We’ve made different shapes and sizes of these at the restaurant and they’ve worked. 😊

KAC Creative any idea how to make it into round shape?? should I blend the baked isomalt into powder and mould it to round shape and bake it again?

Just put them in between sheets of parchment paper and store in an air tight container and they keep really well!

Yes atleast a couple months, even in a fair tight container if you layer baking paper inbetween so sugar doesn't stick

You likely can, just might take a while as it will probably be difficult to spread but it should work!

Get a round cake mould without the bottom peace, cling film around the mould so the glucose doesn't pour out? Heat up the glucose in a pan until liquid and pour it in

Hi! Thanks for your question. Unfortunately not. Corn syrup has a lot more water and doesn’t work the same way when baked like this! Hope this helps :)

Yes boil the glucose until it turns to a liquid texture and add your flavour just before pouring it on the baking paper or silk pat

180c for 5 min but just look through the oven glass until your happy with the colour
