Thank you Alan and Ella for suggesting Rock Cakes to try, who knew their history (prob a lot of you lol) but it was new to me. The Ministry of Food heavily promoted rock cakes because you didn't need a lot of sugar and only 1 egg to get your sweet fix and a lot of people, with rationing, would have been craving a sweet fix!
Rock cakes to me, bring up images of Rubeus Hagrid in his hut at Hogwarts, asking Harry, Ron and Hermione if they would like one, I think they only tried one once where there was an ominous cracking of teeth. Thankfully mine were not teeth cracking and were really lovely, with the addition of dried fruits (left over from the xmas cake).

Rock Cake Recipe
300g Plain Flour
1.5 tsp Baking Powder
80g Sugar (granulated)
plus extra for dusting
150g butter/marg
100g Sultanas/Dried Fruit (comment suggestion: soak fruit in hot tea overnight - drain liquid before using)
1 large Egg
1 tbspn Milk
1/2 tsp Mixed Spice
Pinch of salt
Method:
Add Flour, sugar, salt, baking powder & mixed spice to a large bowl, mix
together. Add butter/marg & rub
together until it resembles bread-
crumbs. Add sultanas/dried fruit to
dry breadcrumby mix. Stir through.
Whisk egg & milk together in a seperate bowl, add egg/milk mixture to rock cake mix and mix well together.
Using wet fingers, portion out small
rough balls and place onto parchment paper in Airfryers. Bake setting 180c/350f for 10/15 mins (turn halfway!). Once cooled, Enjoy!

My mother used to make these years ago. I am 66 so I remember them 60 odd years ago...By the time I was 9, I was making them with my mum.Loved them with butter on. Lovely memories.Put 2 eggs in sweet heart and a drop more milk

I have made these for many years, from my Mums recipe. Her recipe says to sprinkle with Demerara sugar before baking. I have never tried baking them in the air fryer, but will give it a go. 😊

Look delicious! You are so down to earth. I have been baking for years. I put a bit of citrus zest in dough or on top before cooking. Lemon or orange zest. Enjoy

Hello Kerry I just made these today, they came out lovely crunchy outside light n fluffy inside. I'm in love with my little cosori 12 litre oven I put them on two trays so kept an eye on them and swapped over half way. 😀👍🏼👍🏼👍🏼 forgot to add the last time I made rock cakes I was about ten years old, seventy now,lol.💝

Hi Kerry - loved seeing rick cakes being made! Havent seen them for years. Not sure if anyone has said this before, but when converting oven instructions to air fryer, general rule of thumb is to take 20⁰ off the temperature and 20% off the cooking time. Hope this helps 😊

love your no-nonsense approach to your blog. It is very clear and Ilike the fact that when things don't turn out quite so good you accept it & share with us. I am cooking the bar birth receipe also rock buns/cakes. Would love to see you cook a whole fruit cake and a maderia cake also.

Thanks Kerry ,these remind me of my mum she used to make these when I was young to keep them rockey you use to big spoons and the larger ones are the perfect shape and to enjoy them at there best slice them with a bit of butter and a nice cup of tea the perfect afternoon tea ...happy days ..xxx

Totally amazing, I used to make these with my mom and this brings back some great memories so thank you. Only thing I did different was half a glace cherry on top and instead of using hands to load i used two forks, pick up a quantity of dough then just plonk it on tray or in airfryer, its then ready roughed up add cherry and sugar then cook.

That brought back memories Kerry, my Mum used to make those when I was a child during the war years. During the war years I doubt if families had enough points in the ration books to have butter on them, but I think now I might be tempted to put butter on. Must say Kerry as usual they look excellent. X

Thank you Jo💕💕Yes butter added to finished rock cake very likely not an option back then, those years must have been tough for people then. No wonder food shopping went nuts from the mid 50s onwards. I'm sure people have a collective panic on running out of food items now as a bit of a throwback or hangover the mental strain rationing must have impacted on people during those years, you esp feel it in the supermarkets just before xmas with that mad headless chicken momentum before the shops shut for 2 days🥴

Hi Kerry it’s a good idea to soak dried fruit in hot tea,just enough to cover for about 10 minutes it makes them plump and juicy drain before use💐

@@kathymuncaster1511 they are a very adult treat to enjoy. The raisins plump up nicely in dark rum and brown sugar soaked overnight. The residue liquid then goes with ginger ale and ice plus orange peel for a super cocktail. Enjoy!

My Nan made rock cakes every weekend bring them round on Monday and us kids would accuse her of using real rocks and dad would ask what cement mix was in her recipe lol funny how they all got hoovered up in minutes 😂😂🎉 how about Bread pudding Kerry ??

Yes and baking powder..Mum never used all spice as it was a cheap cake because if the war..So ingredients were basic...Lovely with butter on and jam.They are nice with Glacier Cherries also..And savory with cheese added

Hi kerry I'm one of 6 kids and mum baked every Saturday afternoon and sometimes made rock cakes but she didnt used to use lard instead of marg in her rockcakes and they used to be so so yummy and you couldn't tell it was lard she used I always use lard in rockcakes mum used marg in all her baking but not rock cakes I love rock cakes so quick and easy and yummy love fran xxx

Some suggestions if I may: Its easier to melt the butter, then just stir it in with the egg. Try with candied peel or chopped apricots, and orange or lemon zest. Or even sultanas soaked in rum, with cinnamon for the spice Finally, don't turn the cakes over, it dries them out too much.

They look lovely. Reminds me of a recipe I have somewhere given to me years ago by a gentleman and he used cheese and onion instead of fruit for himself and his invalid wife. I would eat all of them fruity or savoury. Thank you Kerry and hope all goes well with your new job.

Rock cakes are lovely, and so does yours Kerry. I was going to suggest using a ice cream scoop to make them all the same size but probably looks better rustic. I love your recipes you do as it’s my kind of food and glad you still use the ninja. Take care.

I made these in my Ninja today. The very first cakes I've ever made in an air fryer. I substituted Canderel sugar as I'm diabetic, but they were absolutely lovely. A naughty treat that isn't too naughty. Going to try your poached egg method tomorrow.

Hi Kerry, they looked lovely, I could just eat one. I haven't made them in years. I just used a spoon to scoop the mixture out onto the tray. Usually when cooking in the air fryer you take 20 degrees off what the oven says. Butlers Empire do a conversion chart. I just wrote one out from theirs. Also cook for less time

Hi Kerry, Made these last week and soaked the dried fruit in some orange juice for about 10mins and added orange zest to the dried ingredients. Have seen coconut added to in another recipe. Will have to try these in my air fryer the way you have done ❤Thank you !!❤

I always soak my fruit in hot tea as well, it makes the fruit stay nice and soft. I find otherwise the fruit goes to dry. . I just noticed someone else had said the same. I do the same for a fruit cake. Of course your choice at the end of the day. Finished item looked good. Xx thanks for sharing.

Kerry love rock cakes also do mine in air fryer yes soak fruit for about ten mins, also try Orange/ Almond or any flavoring in them nice

The dried fruit was left over from the xmas cake Rachel😀, very well wrapped up - I should have soaked them 1st thou. Lidl sell dried fruit and I've now run out - think I'll buy another as they really last for months after opening! So handy to have in the cupboard just in case rock buns or whatever needs to be made😄

Thank you for doing these Kerry . I told you I had a disaster with mine in the Ninja I couldn't get the middles to cook . I gave up and cooked a batch in the oven as my Husband loves rock cakes.I will be trying your recipe but I can't do the rubbing in method at the moment as I fell and broke two fingers , ouch. Good luck with your new job I hope it goes well for you.

My mum also used to make rock cakes and we always had butter in them. Also raspberry buns which I think is a similar mix, she made a little well in the middle for jam, both yummy ❤ good luck in your new job. X

My mum always used lard flour sugar and milk and currant s sultanas or raisins mum always called them the poor man's scone .her mum used to make them in the war so did mum for the 6 of us in the 60s she taught me to make them love fran xxx

At school in the 1960s we were taught to make the mixture, then use half for jam buns, add fruit to the remaining half for rock cakes. Am over 70 and still baking these often.

@@budgetcookinguk What a small world. Do hope your dad enjoyed both spending time in Shetland and playing a murderer (which I suspect is much more fun than playing a good guy). I have a cottage on the Island of Yell where I am a stones throw from my daughter and her teenage girls. With limited access to supplies, bread baking and daily adventures with the Cosori is something of a must, so you can imagine how helpful your KZfaq endeavors are (daughter and her Bairns are veggies and being helpless in the kitchen isn’t an option). Do keep up the good work as I have no doubt I’m not the only old guy your inspiring. Look upon it as the senior citizen support segment of your endeavors lol. Seriously - thanks for your great contend, it really is fun to see what your going to have a go at next, and even more fun trying my hand at it. Best wishes Stuart.

tip fr you. To moisten hands when handling a sticky dough, use a sprayer filled with fresh water. saves ahving to keep dipping hands into a bowl and dripping water. My hubster loves rck cakes- haven't made them in a while so am going to make some this afternoon. thanks x

I could have fancied a bit of butter on the. Idle of mine . But that’s me. I am not sure if others do that or not. Just perfect looking. I remember them back just after the war. They would be a luxury at that time.

Well Kerry you have made pebble cakes!! In the ration days they probably used powdered egg which was haff as a egg replacement, but good as a ingredient! A for effort!😊

Interestingly enough, I turn mine over to top the back off. - And, I use tongs with the silicon tips. better to get at and turn.

Less time on the air fryer ones so as not so hard would be my preference. Soak fruit first may be helpful.

Just had my first attempt at making these rock cakes/scones and while they were moorish they were very crumbly so when you try to cut in half they all broke up, so had to butter each chunk. Where did I go wrong?? Any idea
