As a diabetes educator, I am constantly seeking way to increase dietary fiber while reducing carbs. Food is one of those things that unites us and I love discovering culture through food. I recently discovered bulgur and have been whipping it nonstop in my home. It's the perfect rice alternative - packed with protein, fiber and taste incredible.
Ingredients:
1.5c of bulgur
1 tbsp avocado oil
2 tsp green seasoning mix
1 scotch bonnet pepper
3 sprigs of thyme
1 cup coconut milk
salt & pepper
