Tonight I would like to make something quick and easy so I will try this! I have followed many of your recipes and I am a big fan. Because of you I always keep plenty of Sake and Mirin around. Thank you Noriko and Yuko!

As an update: Everyone enjoyed it so much that there was simply nothing left, not even a drop of sauce! I do believe that the sauce really stole the show for this one.

Ingredients 10 oz (300 g) pork belly (or any cuts), thinly sliced 2-3 pinches salt 1/2 Tbsp Katakuriko, potato starch 1 Tbsp Sake 1 green onion 1/4 brown onion 1/2 Tbsp oil 2-3 cups Steamed Rice Sauce 2 Tbsp Soy Sauce 2 Tbsp Sake 1 Tbsp Mirin 1 Tbsp sugar 1 clove garlic, grated

I find this fascinating! I have never heard about the dish Buta Don nor have i seen a recipe before. Yet, i have made this dish ( in slight variations) for my self several times. I have used the influences You guys have given me and just cooked something that, for me, feels "japanese". I haven´t done the potato starch step tho, what is the function of that? Just for nice surface on the pork? I love this channel and Japanese cooking 101. ( And, ofcourse, Oishii TV!)

I like this dish from a local Restaurant but i think they add a ginger taste to the sauce

That's good too! I think it has a different name with ginger, like Shoga-yaki. There are videos of this. Butaniku no shoga yaki? I've made it at home, surprisingly delicious for a simple thing.

We use short grain rice, but medium grain will also work.

To my fellow Americans, it is not a coincidence that the pork looks like bacon, you can find the meat easily at your local super market or grocery store. To further explain my thought process: while you can get pork belly it is usually a thicker slice, I considered the possibility that the guy behind the counter may not be able to slice it thinly as, as recall, it appeared to be in a branded packaging, while considering this I recalled where bacon comes from on the pig, now there is a difference between bacon and pork belly, but this is whether or not the meat has been smoked and cured, and they do sell uncured bacon, so you can ask the guy behind the counter if they can slice it thinly, if not you can grab some uncured thin sliced bacon from the bacon section, or you can find a butcher.
