I did my chefs apprenticeship under German Chefs and Master Bakers back in the late 80's in Texas and learned so much from them. I often think of them when making certain recipes like strudel, vollkornbrot, pretzels (bezel), Brötchen, and Bienenstich. I will make a video for each one of these in the coming future.

One thing - using clean oil is pretty boring flavorwise. It's always good to fry something up to pop the oil's cherry as they say, usually a starch such as potato slices or stale bread. It browns the oil. You'll get a much richer flavor that way. Most restaurants filter and re-use their oil several times for this reason. Instead of double frying, finishing the chicken in a hot oven results in much crispier breading as well. Save the double frying for temperature stepped french fries.

You bring up some interesting ideas about frying food. I have spent 29 years cooking and baking professionally and was taught by the chefs I trained under that the flavor of fried food is derived from the ingredients used to season the food and the food itself. The oil flavor should be neutral as not to detract from the final flavor of the fried food. Think of Japanese Tempura where that star of the show is the ingredient that is fried in a light airy crisp batter not the flavor of the oil. Though with all cooking we make choices to modify a recipe to suit our own taste which is great. That is the wonderful thing about cooking at home you can always make a recipe your own by changing up the ingredients or the process in which you cook the food. A Candy/Oil Thermometer are indispensable in the kitchen. I learned to use one a long time ago when I was a kid when making fudge, pulled taffy, hard candies, or frying doughnuts or anything else that relied on an exact temperature for the best results. 😃

The resting allows the juices to be reabsorbed back into the chicken. The second fry of 8 to 10 minutes is to finish cooking the chicken and to develop a deep golden brown crunchy crispy crust. I'll have to take some pictures of my Herb Garden Pots. I decide to keep the herbs even closer to the kitchen this year by planting in pots on the patio deck instead of my raised garden at the back of my property.

أنا لا أنصح باستخدام فتات الخبز لتحل محل الطحين لأن طبل الفخار يحرق قبل أن ينضج الدجاج تماما. الوقت فراي للدجاج ما بين 18 إلى 20 دقيقة. هل يمكن فليت و الجنيه من قطعة رقيقة الدجاج الدجاج و محلول ملحي ثم معطف هذه في فتات الخبز لأنها تحتاج فقط حوالي 5 إلى 6 دقائق من القلي. شكرا لك على أخذ الوقت لطرح سؤالك. واسمحوا لي أن أعرف إذا كنت يمكن أن تساعد لكم في أي وسيلة أخرى.

What did you use for a cookware to fry it in, was it a stainless steel stockpot in the video?? I think I'll transition to that from my cast iron chicken fryer cause I think it imparts a flavor I don't like.

Hello bootuber06, Yes, I like using a nice deep stainless steel stockpot for frying. Reduces the oil from splattering all over and doesn't impart any "extra" flavors to what I'm frying.

Hello Angry Bird, Here is the recipe for the Homemade Poultry Seasoning: 1 Tbsp. Dried Sage 2 tsp. Dried Thyme 1-½ tsp. Dried Marjoram ½ tsp. Dried Rosemary ½ tsp. Ground Nutmeg ½ tsp. Ground Black Pepper 1 Dried Bay Leaf (crushed) • Place all the ingredients into a spice grinder and grind until the herbs and spices become a powder. • Place the ground Poultry Seasoning into an airtight jar and store until needed. In my opinion you have the best Detroit Style pizza video anywhere, and all the others are top notch including this one. I'm not much of a baker so the algorithm didn't suggest your content to me a lot... but, I would like to say that I'm very appreciative of all your high quality videos and the effort involved. You should have been viral based on that pizza video alone, it was the best pizza I have ever made.

Trying to understand what the second fry does besides add time and work when you could have browned more the first time. The chemist in this cook doesn't see the advantage...

Hello Richard, Double Frying: The double coated chicken pieces are fried for 8 to 10 minutes or until a light golden brown the first time around. This sets the crust and starts the cooking process. The chicken is then placed onto a cooling rack lined sheet tray to rest while the other pieces are being fried. The resting allows the juices to be reabsorbed back into the chicken. The second fry of 8 to 10 minutes is to finish cooking the chicken and to develop a deep golden brown crunchy crispy crust.
