Calamarata classic Neapolitan recipe
Calamarata is a classic first course of fish typical of Neapolitan cuisine; whose peculiarity is that it is prepared with calamarata pasta, a special shape in the shape of squid rings from which it takes its name, in reality it is nothing more than a pacchero divided in half.
The cooking of this pasta is done halfway in boiling water and the remaining time is cooked and seasoned with a creamy and extraordinary squid and cherry tomato sauce, full of aromas.
These are the ingredients for 4 people:
300 gr of calamarata
500 grams of squid
250 gr of tomato pulp (or peeled)
2 cloves of garlic
Extra virgin olive oil
1 glass of dry white wine
Chili pepper
salt
Parsley
