🌟 Fancy but Simple Chicken with Peaches and Kiwi Sauce - Camping Edition 🌳🍗🥝🍑
🛒 Ingredients:
Chicken thighs (boneless & skinless) - 2 lb
Oil - for frying
Salt & pepper - for seasoning
Peaches (diced) - 4
Kiwis (diced) - 3
Jalapeno (chopped) - 1
Sweet onion (chopped) - 1
Rosemary - 3 sprigs
Garlic (chopped) - 4 cloves
Dry oregano - 1 tsp
Yellow mustard - 2 tbsp
Red wine vinegar - 2 tbsp
Sugar - ½ cup
Honey - 1 tbsp
Cilantro (chopped) - 4 sprigs

🔪 Preparation steps:
1. Spice up those chicken thighs! Sprinkle them with salt, pepper, and a dash of dry oregano.
2. Heat up the skillet on your awesome GSI Outdoors Selkirk 540+ Camp Stove. Time to get cooking!
3. Drop the chicken in the skillet and let it sizzle for about 5 minutes on each side until perfectly cooked through.
4. Take chicken thighs out of the skillet and wrap them up in foil to keep them warm while we work on the sauce.
5. In the same skillet, add some oil and throw in the chopped onion. Saute it until it becomes translucent.
6. Toss in the rosemary and chopped garlic and give them a whirl. Saute them together for a few more minutes.
7. Add the yellow mustard, vinegar, sugar, honey, chopped jalapeno, chopped kiwi, diced peaches, and the vibrant cilantro. Saute the sauce for 10 more minutes. Let the flavors mingle together.
8. Now it's showtime for the chicken! Bring back those cooked thighs and place them on top of the sauce.
Cover the skillet with the lid and let the magic happen for another 10 minutes. Let those peaches soften.
Give it a taste, my friend! Check for seasoning and sprinkle a bit more salt and pepper if needed.
