Garlic - 4 cloves ( minced )
Olive oil - 2 tbsp
Smoked paprika - 1 tbsp
Cumin - 1 tbsp
Salt & pepper - to taste
San Marzano tomatoes ( pilled ) - 1 can ( 28oz )
Tomato paste or chipotle red pepper paste ( for extra kick ) - 2 tbsp
Parsley ( chopped ) - 5 sprigs
Eggs - 7
Toppings: Feta cheese, olives & parsley
Equipment:
GSI Outdoors Selkirk 540+ Camp Stove (the ultimate cooking partner for your outdoor escapades)
GSI Outdoors GUIDECAST 10 inch Deep Fryer
GSI Outdoors Basecamp Chef's Tool Set
Preparation instructions:
Heat up your skillet on the camp stove and add the olive oil. Now, let the onion sauté and tell its camping tales for 5 minutes.
Join the party with the sliced bell peppers and jalapenos, and sauté them for another 5 minutes.
Add garlic and saute it for 2 more minutes
Spice things up with paprika, cumin, salt, pepper, and the tomato or chipotle paste. This camping dish deserves a little kick, after all!
Open the can of San Marzano tomatoes and add them to the skillet. Give them a little chop with your trusty spatula to create the perfect camping texture.
As a special surprise, crack one egg into the mix and sprinkle some chopped parsley
Let the whole dish cook under the lid on low heat for 5 more minutes.
Now comes the fun part! Use your spatula to make 6 openings in the sauce and crack the eggs inside them.
Cover the skillet with the lid and let it cook for 6-7 minutes, or until the egg whites are ready to join the camping party, but the yolks are still playing it cool and runny.
Time to serve this masterpiece! Sprinkle it with toppings like olives, feta and parsley
Enjoy!
