I have 1 MES 40 and a MES 30 that i have used over 15 years catering for many years until I got a big offset. I loved mine. And if ya get a "Ribrack" Ya can get 4 to 5 on a shelf. And yes you can burn pellets there are a variety of pellet devices out there. Great Video!

I had a propane vertical smoker about that size that I drug around the country with us and I loved it. Much easier than having to maintain a fire on the off set.

You apparently used dry chips. Would wet chips produce more smoke?
