WARNING: Do not make too much cuz you will eat them all way too fast!! These were my ultimate childhood treat. They are the perfect movie snacks, and pack up well as an edible gift for the holidays, or a hostess' gift. They are also vegan (if you use cocoa instead of Ovaltine) and gluten-free! ถั่วกรอบแก้ว
The peanuts are coated in crunchy candy coating flavoured with cocoa, and sometimes a little coffee. They're rolled in toasted sesame seeds which give you that munchiness of sesame snaps. Few snacks are more addictive than these and it only takes about 20 mins on the stove; no oven needed!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZfaq channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZfaq videos, her cookbook, and cooking classes. If this happens it's likely because your heat was too high, and the sugar crystallized faster than the nuts could roast. Frankly, I think you are the smartest person I know that ever have a cooking channel. I mean you have the capacity to do greater things rather than just running a cooking channel on KZfaq. OMG! I cant tell you how happy I am to see this recipe! I was a Peace Corps Volunteer in Mahasarakham over 30 years ago. I made it my mission to secure several bags of these every time I went on a 'tio'. I made your recipe and it transported me instantly. I've tried to make various versions of these over the years and always disappointed. The coconut milk was the key. Sublime! And even better with almonds (though I did very lightly toast them first). Hey! I think I found a solution for the "undercooked" peanut problem! I did this myself - I cooked them as directed, but probably rushed it a little. They came out good, but were soft and tasted a little off. I looked up a recipe for roasting peanuts in the oven, and used that, and cut down the time. What worked for me: I just left them on the baking sheet with the silpat, and then put them in the oven and turned it on to 350F. I set a timer for 10min after the pre-heated chime sounded. So, maybe like 15min total? I pulled them out and let them cool, and they're perfectly crunchy and have that roasted peanut taste.

Were you happy with the end result on your batch? I know there are various elements that may affect the end result. I had more clumps or sugar outside than on the peanuts. 1/3 of the peanuts had lost their skin during the process. The sesame did not stick on as well. The peanuts although not raw tasting, were not crisp, although the coating was.

I tried your recipe yesterday. Although I just used 130gr sugar instead of 160 like yours but it was still a little sweet. The next time I will add more chocolate powder and coffee powder to reduce the sweetness also make it more flavor. Thanks you a lot for an amazing recipe!

I love that in Mexico, raw skin-on peanuts are really easy to find. I have a whole fresh kg just in my pantry for no particular reason.

Made this today and unfortunately, mine came out soft, too. A few tips: 1. I kept the heat very low, so I don't think the problem is the flame. It's the peanuts themselves, which are huge, about 2cm long. They didn't have enough time to roast before the syrup dried up. So go for the size in the video. 2. A non-stick wok will work better than a conventional one. Not that the sugar will burn, but I still lost quite a bit to my pan. 3. I did 300g of peanuts but I didn't scale up the sugar, and I find it sweet enough. Hope everyone succeeds!

Forgive me if I've duplicated questions, but: (1)Can you sub witth coconut sugar? (B) Also, (for the adventurous): How about either red pepper instead of coffee, or pepper flakes instead of sesame seeds? Will the capsacin muddle up the sugar chemistry? (notice how I used "muddle" instead of *expletive delete*?)

Maybe "keaw" because caramalized sugar looks a bit like glass shards.

I watched one KZfaqr's recipe for tanghulu (basically crispy-sugar-coated strawberries) and I remember thinking they seemed to "shatter" like glass. I thought the description fit here too. I wish I could make these! But I'd probably destroy one of my cheap pots/pans in the process. XD

Coffee also helps boost chocolate flavor, so is often added (either as instant coffee or instant espresso) to chocolate desserts.

Hi Pai - this is definitely going to be my next attempt - I didn't eat them in Samui, never saw it but it sounds delightful. I love your techinical detail - well done, a true professional. I taste is very good, I made two batches however is can get the sesame to clign to the peanuts. I waited to see wet spot but after 32 minutes I pulled it off the flame so it didn't burn. I am my waiting long enough.

Ovaltine! Yeah, I used to drink that as a kid. It was really more something from my parents generation. My dad claims he had the decoder ring. I never knew they marketed it in Asia.

Maybe this is called ถั่วกรอบแก้ว หรือ ถั่วเคลือบ, ที่ใช้คำว่าแก้ว(glass) เพราะว่าน้ำตาลที่ใส่ไปละลายเคลือบอยู่จะแข็งเป็นแผ่นใส(กรณีที่ไม่ใส่ส่วนผสมอื่นจะเห็นน้ำตาลเคลือบสีใสแววๆหน่อย)และเวลาเคี้ยวจะกรอบแตกเหมือนเวลาทุบแก้วให้แตกเป็นเศษเสี้ยวเล็กๆ. I think this is not difficult for you at all to translate from my Thai explanation to english lol.

We have a similar sweet here in Argentina called Garrapiñada which is basically peanuts coated in caramel with vanilla essence sometimes, the are sold everywhere, you can find street vendors on every corner and every park in my city and I agree with you, they are so addictive Now I can't wait to make this Thai version, thanks for sharing this recipe with us :3

Hello Pailin, I really enjoyed your video on “can’t-stop” candied peanuts!! A couple of years ago I had spicy tom yum nuts in Japan and I fell in love with it. I have been looking for it in Canada since then but no luck, so now the only option for me would be to make it myself. It’d be so great if you could share a recipe for that. Korp khun ka!🙏🙏🙏

My word these are good. Please heed the advise and make a small amount because you simply can not stop eating them. I didn't have Ovaltine but I did have malt powder so I mixed malt powder with cocoa powder.

At last, found someone who is trying the same substitute as I want to. How did it turn out? Did you use everything else in the same quantity mentioned in the video? I find my malt powder (barley malt extract is what it is named) clumps up when exposed to heat. I bought it for the first time with the intension of make this a vegan recipe. Do I have to mix it with some cold water first?

Thank you for sharing this I remember eating these in Bangkok. I made this in a small coated sauce pan with homemade coconut milk and it was amazing but I don’t really have coated pans( aka non stick pans) I only used stainless steel & cast iron pots and pans. Would it be possible to make this in the stainless steel pan ? I wanna make a lot to give ppl as Christmas gifts

"แก้ว" (Glass) in ถั่วกรอบแก้ว come from the shine of sugar that melted and glazed the peanut, that's all my grandma told me

That's not really necessary actually, as the heat of the molten sugar will roast them right in the pan.

@@PailinsKitchen actually some chinese peanuts you have to roast them first. I even have to soak them in water for 3 days to soften if i want to make desserts that call for peanuts. that's why i only buy taiwanese japanese or korean peanuts now.

Grown in Switzerland I belong to the ??% of swiss population who hates OVO (... and cheese, but hey, in stead of it I love marzipan and raisins) so I guess Nesquick, Caotina or just cocoa with some additional sugar powder would work great in my case 😅. Now I just need to find raw unpealed peanuts 🤔 ... Thank you very much for sharing this recipe.

We have something similar in France called chouchou. The flavour is usually vanilla. It is indeed impossible to eat just one....

We also have a similar street food in Argentina, also with vanilla. We called it praliné, which is confusing because in french the term "praliné" is a paste. The term praline, pronounced "pralin" would have been a better choice, as that is what almonds with caramelized sugar are called in France (correct me if I'm wrong). Spaniards have "almendras garrapiñadas", which is basically the same thing. Now, adding coffee and coconut milk and sesame seeds sounds great, I'll definitely try that.

It's called a "Korea King" - though we don't have it in the "Kit" as it doesn't seem to be available through Amazon. Cheers! Adam

Thanks for responding Adam. I did find it on Amazon through a sub-seller for $529.51 plus s/h, and also through Alibaba. Too pricy for me. The Thai Consumer Protection Bureau in May of this year launched a full scale investigation into the manufacture and safety of this company's "marble" brand products as there have been complaints that it does not contain marble and is instead thought to be aluminum coated. It may not be a big problem but no reports of findings have been published to date, as far as I can tell. Just something to consider if using acidic ingredients like vinegars or citrus.
