I was taught to spoon or scrape the meat off of the fillets. It's a great tasting meat that you can make fish cakes out of. Spooning the meat gives you a fish-burger type meat perfect for fish cakes or soup, ladyfish is dee-lish if you can spoon the meat off the bones... patience is key..

In Hawaii we scrape the meat off the bones with a spoon then prepare it all different ways raw,fried and steamed if you mix the meat with ground pork water chestnuts soy sauce and ginger it makes a delicious burger over here it's a treasure for sure

Yup. I totally agree. They also thrash around like crazy and almost hooked myself a few times. A sea of bones. Great video and my thumbs up makes it 300.

i've eaten lady fish in the past by baking it in tinfoil with some butter and minced garlic, if you bake it like i did its not very hard to eat because the meat just slides off the bone using a fork. the fish i cooked were bigger than this one though so im not sure if it applies to one of that size.

We used to get it at Winn Dixie but since they got bought out they don't carry it anymore. You have to buy it direct from them online.

I went through this the first time I tried cooking ladyfish. With these fish, you take the fillet to the blender then turn them into "lady patties" (think: salmon patties).

I ran across some big 20"+ ones at the jetty last week, very fun to catch and fun to see them jumping out the water. I just cut em up for redfish and whiting bait. Probably good crab bait too.

What about a fish makes you decide how your going to cook it? I thought for awhile you cooked delicate fish in butter and garlic but your breading this one so that just through that thinking out the window. So how do you decide?

nice video.. best way to eat them is to boil the fish and take meat out with a spoon then cook with sofrito like you’re doing bacalao

Here up north when we cook brook trout we pan fry them in butter or a light oil then when you eat them you grab the tail and if they are cook properly you can lift the tail and all the bones away from the fish in one piece as the meat flakes off. I think If you don't fillet them, just cut off the head and scale and gut them they would come out easier to eat as you should be able to separate the bones easier.

Ha first time I caught this, I thought it was a blue. Got it home, was impossible to filet / get out the bones. Have to try that spoon technique others r mentioning

Does it have a Y bone like a Northern Pike.? BTW nice recovery with bird nest.! Working on round 2 seasoning the stew pot as I type.

I guess, but it's way too mushy to ever fillet off the Y bones. The bones are kinda like an American Shad, but the meat is like jelly. Not worth it. Some folks up where I come from on the Upper St Johns River can fillet those Shad and they are delicious.

I wonder how they would be canned. They say northern sucker is trash because of bones. But they are great canned and the smaller ones are very good pickled. Both types the process softens the bones which are not exactly fine bones like on the lady fish. I enjoy your videos keep up the good work.

I make patties out of ladyfish. Scrape the meat off the fillet. Add some salt and pepper, form into patties and fry. No fishy taste, very clean and sweet flavor.

I wonder if this is one of those fish that need to be live welled until time to clean. The meat may not break down from the enzymes from being dead on ice for a period of time.

Good vid, my friend. Just recovering from surgery and have caught up on all your vids. You've caught and cooked just about all the fish I'm curious about, except one- Bull Shark. I use to catch a lot of these when I lived on the Outer Banks. I googled whether or not you could eat them- didn't find anything about that subject. Talked with some of the 'old-timers' , after much of the standard " Damn Yankee" comments, I was ALWAYS told, you can't eat them, because the meat is poisonous. One other observation about the fish you catch, I notice you don't bleed them out, by cutting their gills. Anyways great content, keep up the good work, I'll see you on your next vid.

Great Video. I don't know if you knew this Everglades seasoning makes a season batter that's really good. I like using it for Gator tail. I don't know if you've ever eaten tarpon but it's a same way tons of Bones what we've done is beat the flesh to made a pulp like substance, pick out all the bones to make croquettes .maybe lady fish can be used in that manner as well.

I heard of a method where you catch a few, and just scoop out the portions of meat with a spoon, that don't have bones in them... then you make a patty out of that, and pan-fry it like you would a burger.

There is a way to clean a Ladyfish and get rid of the bones. Fillet them leaving on the skin. Put it on the cleaning board skin side down and pin down the tail end as you would to skin it. Take a spoon and just scrape the meat off. The bones stay attached to the skin, supposedly. The meat is mushy, because, just as you said, it lacks texture. Even more so after you scrape it off the skin! I've fried it that way and did not like the texture. However, I believe it would be improved by adding cracker crumbs, a little onion and Everglades Seasoning and making them into fish cakes. So, there's another chance for you to make a treasure from trash fish! I've heard the Bahamians do the same thing with Bonefish. I think both of those along with Tarpon are in the Herring family.

We have a fish over here in the inter coastal waterways of Fort Lauderdale called Lady fish or look ups. They are good to eat though. They also call them jokingly " toaster fish " Because they are real narrow and can be cooked in a toaster they say. lol

felet the lady fish from head to tale leaving attached at the tale. take a spoon and scrape the felet starting at the head end while holding the tale end and work your way to the tale. all the bones are attached to the skin when you finish you will have all the meat in your bowl and all the bones stuck to the skin. if you are going to fry it be sure you keep as much water out of the scrape as possible. your egg-mayo wash probably want work. try almost golf ball sized nuggets rolled in a dry batter. logger john.

now you know how a lot of these fish got their stigmas. one bad experience due to lack of knowledge can turn a person off to a fish, and by extension anyone they tell about it.

You cold do the same thing to lady fish that we do to white shad here in Georgia we do something called gashing and it cuts all the bones up really small where you don't choke on them

The best way to eat that is cuban style you take a spoon and scrape the meat off the filet and then only the meat cams out and do fried fish balls .

We used to bowfish the hell out of the big ones (30+ lbs). Takes some knowledge to fillet them well, but we all agree it's pretty much the same as shark meat you can feel better about eating. I can appreciate the sharks' roll in the ecosystem. Just heard they make damn good jerky as well.

I've heard you should let the fish sit on ice for a day or two before fillet them. Then you can scrape the meat off the skin with a spoon and the bones stay attached on the skit.

Ladyfish are great if you make fishcakes out of them! The trouble you got with the bones are easily taken care of by scraping the raw flesh off the fish with a spoon! You cannot simply filet and fry all fish! After you scrape the flesh off, mix with a combination of chopped green onions, chopped water chestnuts, breadcrumbs, salt and pepper, form into fishcakes then you can fry them.

The best way to eat ladyfish is to grind it up in a fine ground meat grinder and then make fish cakes. You’ll be highly surprised at the difference! 👍🏼

I am a fish eater, I will eat many kinds fish that's considered trash, but I have to draw the line at Lady fish. First if you don't get the oil at just the perfect temp. or miss the timing on the fry cycle they will often be very mushy and unappetizing, and having to deal with those bones on top of that makes it a deal breaker. There's too many other easily caught fish that's much better than these. These should be relegated to being either a starvation preventer or bait fish which they're good at, big grouper will inhale these babies.

I disagreed this fish can taste good but it will take i technic to remove the meet and cook it. Cut the fillet and pu it on a flat table meet side up hold the fillet with fork, knife or anything use a spoon and gently scrapes the meet dont pu any pressure. After you strract the meet cook it as it was crab meet this meet will cook similar testure as scable eggs and it will shock you how good it taste

Backwoods Gourmet, I felt sad when you told that story about the fishing guide and why a Ladyfish is named thus. He obviously has not had a good and healthy relationship with a woman. I thought that was a demeaning comment toward women. Women and men are not perfect but they are meant to compliment each other. Bitter people often make bitter comments about the other sex and that is just a shame. My parents have been married for 58 years and they are just as much in love with each other as the day they met. They have always treated each other with love and respect and have worked out any problems mutually. That is the way it should be and they have shown me what a loving and healthy relationship is all about.

I had to do that when the Remora video was popular with the millennials. They don't have any problem dropping the F - Bomb or making way over the top comments at me and others.

Funny too because I imagine in your time in the Corps you are pretty accustomed to that kind of language as I am. I just don't see the purpose of it for a video anyone can watch. I'm just getting to know you and your channel. I saw you spent some time at Cherry Point (or was it Lejeune?). I am in NC and grew up in New Bern.

Cranki I was in Cherry Point with VMA-231 Harriers. I lived in Newport. I fished a lot out in Atlantic Beach when I was there. That pier was my second home when we were onshore. I agree that the salty language should be with your brothers and friends and not with the entire world.

Wrong bro... you didn't do your homework. You have to scrape the fish off the bones very easy to do with a spoon no bones whatsoever. Then you can make fish cakes out of them it is a traditional Vietnamese dish and it is delicious definitely treasure

Man, is painfull to watch you filletting a fish...Sorry. And lady fish are tasty, really tasty...just cut them in two fillets with no science and spoon the meet off , make patties with some bread, milk one egg and some spices and grill, oven or stove, watever you like . By the way try to stop using too much that southern spice you used, 50 % is a chemical invented to estimulate the flavor (Sodium glutamate) and is not good. You still use it but dont use it when you cook for children . Regards. Fred.

This fish is like trying to filleting a bag of mashed potatoes and not worth the effort unless you're starving. They make great bait, and I will continue to use them for that purpose only. Thanks for watching.

You need to get the meat off the bones! Not trash! Filet then use spoon to scrape the flesh off the bones. Very easy. Please Google Thai Fish Cakes. You are So WRONG!!!
