CAN CAN CHICKEN
(from Timeless Recipes with Minute Rice, 1965)
1 can condensed cream of chicken soup
1 can condensed cream of celery soup (I used cream of mushroom)
1 1/3c water
1 1/3c minute rice
1 - 12oz can diced cooked chicken
Chow mein noodles OR french fried onions for garnish
Combine all ingredients except garnish in a large skillet. Bring quickly to a boil. Cover and simmer for 7 minutes, stirring occasionally. To serve, top with chow mein noodles or french fried onions

No but I will as I stocked up on lots of canned chicken during the pandemic I need to start cycling through it before replacing it. Re: the sushi rice dish in the Minute Rice cookbook, sushi was not commonly known across the US in the 60s. I like the drawn artwork, every time I see that style artwork it makes me think of some of the title sequences used between the various scenes in a great old comedy movie from the 60s, The Great Race (starring Tony Curtis Natalie Wood Jack Lemmon, Peter Falk). Anna, I’ve noticed what I am assuming is a cold brew coffee type brewer? Would you mind sharing the brand and if you recommend it? I haven’t found one I like, but I am a fan of manual drip/pour over hot coffee. Nothing fancy, I’m quite happy with my Melitta pot and cone but want to find something to up my cold brew game. Thanks.

I _love_ that you really give old recipes a fair try. Almost no one would think old recipes are high cuisine or the best thing in the world, but there are channels that exist simply to poo poo and make fun of old recipes that may not be perfect or the best or the healthiest. It’s like, ‘we know, we get it. But have you really tried your best with them, and are some of them pretty ok, maybe quite tasty? And could we think of fun ways to update them for our use, but keep some of the time savings and cost savings too?’ Cuz that’s super fun, and you do such an excellent job meeting these old recipes on their terms, sharing ideas, and it’s so fun to see the pages of the cookbooks and the drawings! I appreciate what you’re doing so much! 🙂✨

In the 1970's we were fortunate to have a lovely Japanese family move next door. My mother welcomed this sweet family, especially the mother. The next day the Japanese mom presented my mom with a beautiful wooden box that contained real sushi. The Japanese mom couldn't speak English but kept calling the food inside sushi. I ran to get the encyclopedia and read that it was raw fish and rice. She had made them herself and each piece was absolutely gorgeous but the thought of eating raw fish at that time was so alien to us! I'm sure we insulted her by refusing her beautiful gift though she did not hold it against us. We all fell in love with their adorable family.

Canned peas, corn, or green beans would be a good addition that would also be camping friendly. It would also make it less beige.

I grew up with Minute Rice, it was the ultimate economical food stretcher when times were rough --- Minute Rice in chili, meatloaf, soup, stews, easy pudding when we were sick. And no holiday would've been complete without broccoli rice casserole made with cream of chicken soup, minute rice, frozen broccoli and Cheez Whiz.

I have found recipes for homemade cream soups, so that's what I use. Also, I dehydrate regular and brown rice to use as "Minute Rice", so that I have it year round. Love these recipes!

@@yvonnepalmquist8676 You mean the rice? Yes, cook it first, let it cool, and then dehydrate it. Since I live in a VERY rural area, we suffer power outages, so I have a small gas burner and can make rice quickly. I use canned chicken to make a meal. I also dehydrate veggies so I have a well-balanced meal.

You could have called anything "sushi" in the 60's and gotten away with it. Nobody had ever heard of it. My mom would have loved that chicken recipe. She never met a can she didn't love😊

I made this tonight, and used Cream of Celery soup, because I can't eat mushrooms. I wanted to saute some onion to add to the chicken and soup mixture, but I had French Fried Onions on hand, so I went with those instead. They did add to the dish, so I'd definitely use them again. Instead of using Minute Rice, because I don't cook with Minute Rice, I made a small amout of a multi-rice blend, and served the chicken & soup mixture over it, rendering it a "Chicken A La King" type presentation, and it was quite good. I did reduce the amount of water, to 1-Cup as well. I also added some frozen peas to the chicken & soup mixture, and topped it all with some sour cream, kicking it up a few more notches even still. I would make this again.

I've made a version of this before, but my recipe called for canned water chestnuts and frozen peas. We liked it but somehow I had completely forgotten about this recipe! Your channel inspires me to start looking through my collection of cookbooks for new things to try and old ones to revisit, rather than going directly for a specific recipe. I'm enjoying strolling through them and having a much wider variety of meals. Thanks for pulling me out of the rut I was in!

I was 11 years old in 1965 & never heard of sushi until a few years ago. I live on the Atlantic Ocean with lots of seafood although I am allergic and can’t eat it. I like this recipe, would add any veg I had in the fridge along with Mushrooms!

This is something that my mom would have made when I was really little. Like late 70s, very early 80s. She was very big into using recipes that incorporated cream of soups.

The other day I was so tired & needed a meal & needed to use up some chicken thighs. I put a tin of carrots, a tin of sweetcorn & a tin of bamboo shoots & half a tin of chickpeas in a baking dish & sprinkled them with some Italian herbs & a crumbled vegetable stock cube & a little fresh basil. I put the chicken thighs on top & sprinkled crumbled chicken stock cube on them & a few olives. I was really tired & needed a meal so I was not really thinking about the combination of things. I just knew I did not feel up to preparing any vegetables. I just put it in the oven till the chicken seemed cooked through. It was really nice. I was surprised how much I enjoyed it, so it is definitely worth keeping a few tins for such eventualities.

My mom made a baked chicken/rice/cream soup casserole that is still the height of comfort food to me. So a lot like this one but made in the oven instead of on the stove top. I make my own version of it a couple times a year. I loved the big yellow letters and numbers in the book! It looks like a useful one (as opposed to some of the older books that are more of a novelty item, of which I have more than a few!)

This reminds me of my husband's "Walrus surprise!" The surprise? No walrus. It was simply cream of mushroom soup, milk and peas mixed with egg noodles. Our children eat it up and it's a last minute dish often made at the end of the month (when the larder is a little bare) to this day.

You could make this with canned tuna or ham as well. To this day, my favorite tuna casserole is the one I learned in Grade 8 Home Ec. Minute Rice, cream of mushroom soup, tuna, black olives (optional), and grated cheddar cheese to melt on top. I’ve tried making it with regular rice, but I have to mostly cook it first. Minute Rice is best for it.

You used some water in rhis recipe why didn't you put it in the can and mix it with your spatula you could get more of the context out of the can that way.😊

I still make something similar. I use tuna instead of chicken and definitely use cream of celery and add in some sautéed onions.

My Mom used to make something very similar, I don't know where she got the idea for it. She used to be a cook in a diner. It was pretty much your recipe but she would throw in some frozen peas & carrots or even broccoli. Growing up, it was one of my favorite meals!

Sushi began becoming popular in the early 60's for middle to upper class. Along with the fondue sets it was served mainly as hors d'oeuvres. Restaurants began serving it & became popular in California & west coast 1st. The famous "California Roll", which is an inside-out “makizushi” roll with cucumber, crab meat and avocado with white rice, caught on quickly & spread throughout the U.S. I personally am not a fan of sushi & remember as a child (grew up in the 60's & 70's) going over to one of my Jewish friends' house & they were serving bagels & lox which is technically a type of raw fish (salmon soaked in brine). Needless to say I did not have any of it! LOL! Always enjoy your videos, keep up the good work!

Anna *** A tip I do when I need to get remaining food out of can/cans of food I need for recipe. I pour the liquid I need for recipe in empty can of food I used and stir liquid around in empty can. If I need two cans of food, I pour liquid in one empty can and then pour back and forth into one can to another. It gets remaining food out of can. Anna this looks wonderfully delicious. I agree the additions you mentioned sound great. I love how easy and budget friendly it is. Love the cookbook details too. Love from Ky. Thank you for another great video.

I love that rice/soup combo chart! And that sushi recipe…😂 This was a really fun video and perfect timing for me. I recently bought minute rice for the first time in 10+ years to make a stovetop rice, tomato soup, frozen veggies, cheese, and slivered almonds recipe that I rediscovered in an old cookbook.

I save this set of pots and pans exclusively for making videos! My parents found it for me many years ago. The price for all of it? $15! I swear, they have the best flea market and thrifting luck.

We didn't have rice much. Minute rice was fairly new and was mych more expensive than a big bag of regular rice. My mom was a terrible cook and couldn't make rice to save her life. So only had it when i made dinner as a teen. But before rice cookers i used minute rice all the time. 😅

That really is a groovey cookbook Anna! That sushi does sound different...Hahahaha. Ive never had that version before! I know some people are put off by canned chicken, but I honestly love it!! It takes on the flavor of whatever other ingredients you use! I would totally eat the can can chicken! I would add some chopped water chesnuts to give it a bit more texture too!

One of my family's favorite recipes! I grew up eating this. It was one of my mother's faves, we ate it probably every two weeks. We called it Chicken ala Can Can. Probably because of chicken ala King. Where did you find your Minute Rice cookbook? I have a big box of little books from various food companies. I'm currently looking through it to see if I already have a copy. Love your videos! I just found your KZfaq Channel & instantly subscribed. Cottage cheese was used s lot for dishes like the cottage cheese bake & yes that type of sushi sounds quite familiar from that era. One other note, after bringing this dish to a simmer, I put it in the oven 350* for about 20-25 mins. My mother always put French's Fried Onion Rings on top instead of chow mein.

I also believe canned soups are interchangeable, I don’t like cream of mushroom so I always sub it out for a different cream soup. French Rice Cake looks interesting!

A Mexican-American friend says that they call what happens to their food in the US, "whitewashed". That appears to be what happened to that sushi recipe.

This was very easy & tasty. However, at the end of cooking time mine was still very soupy so had to cook about 10 more min with the lid removed to cook off some of the liquid. Otherwise very good!

I never have minute rice , I have boil in bag rice or microwave rice , lol I love the idea of a shelf stable recipe . I’m not sure if I’ve ever done one of those type recipes

I think you can use boil in bag rice if you cut open the bag and dump it into the pan. I love shelf stable recipes, because it usually means I'm using something from my pantry! 😂

I'm wondering if maybe the inclusion of a "sushi" inspired recipe had to do with the rise in popularity of Benihana, I went and did a bit of googling and they opened up in New York in 1964 but became super popular the year after opening due to a rave review in The New York Herald Tribune

Sushi means “ small balls of rolled rice”. With vinegar. Served with vegetables, or egg, or fish. So maybe their idea of what it was?

Sushi is not the raw fish, it is the rice (which is a particular kind and prepared in a particular way) so it may be trying to imitate the sushi rice at the time....

Oh, definitely, this recipe is comfort food! I agree with the substitution of the creamed chicken instead of the creamed celery soup; I think creamed celery is gross! You could also substitute some elbow macaroni and cook it ahead of time, and serve the creamed chicken mixture (definitely add some mixed frozen veggies) on top of it. The one question that I have is that, whenever I use canned chicken, I can always taste a metallic twang from the can when I eat the chicken, unless I drain the liquid and actually rinse the chicken in a strainer before adding it to the other ingredients. Were the flavors of this recipe enough to cover up any metallic taste that might have been in the chicken?

I don't use canned chicken super often, but I didn't notice a metallic twang from this. I did drain it but did not rinse it off. Let me know if you give this a try!

I dont know why the one recipe with cottage cheese and rice makes me want to hurl at the thought...the texture...not sure. Will of course keep an eye out if you decide to give it a go. I will have to try this recipe with your recommendations to add chicken broth instead of water and some fresh veggies. Seeing those chow mein noodles reminded me of pb chow mein cookies and now I want those as well lol

I totally get it! It does seem like a bit of a weird combo, rice and cottage cheese. Very...grainy. 😂 Ok, no you've got me thinking about the peanut butter/butterscotch/chow mein noodle cookies, too!

Growing up in the 80,s & 90’s I definitely had this my parents doubled the cream of chicken soup added leftover chicken & finished it in a casserole in the oven so the top layer of rice crisped up & my bro, sis, & myself always fought over the top & corners. 😂 I’ve made since being a mom it’s quick & easy & I often add veggies my boys like.

Ok, so "sushi" actually is about rice more than the accompanying fish, technically. So, there's that. And historically, I'd guess there were into the high double-digits for a non-Japanese heritage population that had actually experienced sushi as we now know it here in the US at that time. So, your recipe, while sounding fairly appalling, is not a shock. There's a really fascinating book called either The Story of Sushi or The Zen of Fish, by a guy called Trevor Colson (same book, probably different publishers), talking about sushi historically, including its arrival stateside. The book came out in the early 2000s. So, in the 60s? Might as well have called the recipe Geisha Rice, or Sumo Rice, or something similarly ... evocative.

That sushi recipe sounds seriously strange. I think they used horseradish to replace wasabi?? I would think wasabi couldn’t be gotten in most stores in 1963. I would also be confused by that one.
