Describes the initial steps in making 1 gallon of pineapple juice wine.
Ingredients:
(3) 40 oz cans of 100% pinepple juice
2 cups sugar
1 cup rasins
1 black teabag
1/2 teaspoon bread yeast
1/2 teaspoon wine yeast (or bead yeast)
During the first 3 days give your musk a good stir, and to break up the fruit cap that will form if you are not using straining bags. Rack into secondary after 5 - 7 days, and continue to rack every 4-6 weeks until clear. Degas, back sweeten, bottle let age for at least 12 months total.

The first brew I ever made was pineapple wine, and it was completely by accident. I forgot to put the container back in the fridge, and the next day, it was starting to swell. So I kept burping it for the next week or so until it stopped gassing. It wasn't half bad in the end.

I tried a canned pineapple juice wine with bread yeast and it was rank, i poured it out. I also had 6 gallons of oatmeal stout go sour. I think it's because i tried to get by just thoroughly washing plastic fermenters with soap and hot water right before i used them, and i need StarSan to get it right

How sour do you think this brew will be? When I made my own pineapple wine I wasn't sure if I contaminated with a vinegar microbe due to how sour it was even after back-sweetening.

How would I do this if I wanted to make this recipe a mead instead of a wine? I'd like to try to sub the sugar for honey. I actually want to do both at the same time and decide which I like better. Thanks.

A mead is made of honey and water, plus anything else that you would fancy. If you add honey to your pineapple "must" I would venture a guess that you would have a higher alcohol percentage, in relative of say, regular table sugar.

So, just follow his recipe but sub the sugar for honey. Real honey.

@dejaesharp5812 Won't work since honey doesn't have the same amount of sugar as cane sugar. Ratio will be off.

I thought it was necessary to boil the sugar in, is there good reason to assume the sugar is clean enough?

If your're looking for a technically correct wine making channel, this ain't it. Here simplicity is the key.

@@DIYFermentation hey if it works it works, I'm asking cause if I can get away with not boiling in the sugar, I too would prefer that

@@thematronsmilitia you can usually get away with not doing any sanitizing, boiling the sugar is really not needed, most sanitizing, including with fresh fruit is more to be careful, there's very little chance for infection even without sanitizing if you're careful

@@bigstinkymonke that's not true. You can very easily get lactobacillus, wild yeast, acetic acid bacteria etc. It's not likely you will become ill but it is easy to ruin your wine
