Pressure canning is a great way to preserve fresh salmon!! This is how I do it!!

Your so right having Canned fish that you have done yourself is like having Gold! Much more Superior in taste and Quality! We like to Can Whitefish that we catch, we also Smoke and then Can it as well. I'm always so proud of myself when I look at the finished product, LOL :)

I also do this with trout. I add 1/2 tsp of garlic powder, 1/2 tsp onion powder 1/4 tsp canning salt and 1 tbsp of water to each 1/2 pint jar. The pressure canning dissolves all the little rib bones.

Its really good to put a little smoke on the fish first, about 30 minutes. Also I let my fish sit for at least 6 month before eating it.

I lived in Alaska 60 years. I caught, smoked and processed wild Salmon. I would never can Atlantic Salmon as it has mingled with farmed salmon and does have too much Omega 6's which is not good for you. I like canned fish, but I do not like any fish that has been frozen as it definately alters the taste of the fish. When I smoke fish I smoke it hard and fast 15 min at most. It is still raw in the middle. Canning intensifies the smoked fish so that's one reason I only lightly smoke the fish. The other reason is if you hard smoke it untill it's done you end up with really dry fish after canning. So the new canning news from ball is you do not have to sterilize jars or heat up the lids and rings anymore. The seal part of the lids will get plenty hot during the canning process. I still run my cans through the dish washer and wait for them to cool before I raw pack any meat. I never add any salt to meat or fish but I sometimes add spices and herbs. There is never a need to salt anything you can.

Yes you can, might I suggest that you can only wild caught salmon.

does the salmon get cooked in the jars while your canning it? can you put more seasoning into the salmon rather than salt?

Yes the salmon is fully cooked after it is canned and you can add many types of seasonings to your jars before you can it. you don't really need to add salt if you don't want to. Hope it helps!

is it true that you have to always get new lids when canning again? you can use the jars but not the lids?

Great question! When your using traditional lids like I do, you can use them one time, after that they shouldn't be used to pressure can again, but you can use them for regular jar caps for dry things. The only lids you can use over again are Tattler Lids.

luv2craftcards No the rings can be used over and over again. I only throw them away if they have rusted, bent, or have nicks in them.

Hi luv2craftcards. Canning & Pickling salt is salt without the anti-caking or iodine additives. You can use kosher salt as a substitute. Hope it helps!

I was at Wal-Mart the other, I hardly ever go there, and there was a bag that said "canning salt" I quickly took it bc it was the last one. I have no canning items but I grab that. I'm trying to start canning but i's lost. I know it's easy. I live in NY but thinking of moving to the country life. don't want but I have to. Thanks for the help. I can already hear Gordon Ramsay shouting “you don’t can salmon you donkey”😂😂 In the other hand, you are doing great, but i don’t recommend canned salmon if you have the chance to cook it, because fish is best as fresh, not canned
