The water doesnt cover the jars. How does it work with that water level and how do you know how much to put in??

@@loramcclamrock5549 this is pressure canning not water bath canning. In water bath canning the water will need to cover the jars usually a inch or so. Water bath canning is for high acid foods. Pressure canning ( like what is shown in this video) usually only needs 2 to 3 inches of water in the bottom of the canner. The instructions that come with the canner usually states the correct amount. My presto 23 qt pressure canner requires 3 quarts water. This is so there is enough steam produced throughout the canning process and the canner will not run dry. FYI- almost everything can be pressure canned if done correctly BUT NOT everything can be safely water bath caned!

@@loramcclamrock5549 This is pressure canning so only need few inches water to build up pressure. Water bath canning is different. It requires water completely over jars. 🙂

I pressure canned for the first time this past weekend, and this is what I chose to prepare. Last night we ate chili and my kids think it tastes like the name brand chili beans I used to buy. Love that I can control what my family is eating! Thank you for your tutorial!

I say this would be good use 100% tomatoes juice (i.e. no water)...I say the beans thicken it up to a tomato sauce consistency. Yum!

These are amazing!! 3 years now these are my chili beans to make my chili. In fact my 12 yo grandson will only eat chili if its made with these chili beans. Heather you're a treasure. ❤️❤️❤️

I've made these and they're great. When I did mine I did them all "assembly line", beans beans beans..., sauce sauce sauce..., spices spices spices... Instead of each jar, one ingredient at a time.

I assume doing the rest, she did too. But for showing "how to" in an instructional video, there would be no need to take longer and do beans, beans, beans, beans, beans, beans, beans-- until 7 quarts to fill the canner had beans, then sauce...x7.

I can say I have canned this recipe lots of times since Heather made this video & I love them. I use them in my chili in place of commercial canned chili beans. Also really good just to eat as is. Great pantry item to have.

Omg Heather, I just had to come here & tell you a HUGE THANKS for sharing this canning recipe. I made this yesterday & just opened 1 up so I could test taste it. The best ever!!! I could literally eat them cold out of the jar!! I actually did eat about 1/3 of it. I did 9 pints using pinto beans, that is 1 layer of my pressure Canner. Guess who has plans to do 18 pints very very soon. 🙋🙋🙋 My goal was to have red beans canned which I now have plus chili beans...which I now have, to make my homemade chili with. Oh I'm so excited about it.

I can't even express how much I love this recipe. Super yummy. So many options. Great to help fill a canner if there is not enough of something else your canning. I don't see myself ever making a pot of chili again. I will just make a canner full of Pint jars full of chili and serve it right in the jars to every one. Thank you so much for this great recipe!

Girlie, I tried this recipe of yours and loved it!!! Didn't copy it down, and was getting HYPER when I got back on here and tied to find it--and couldn't! Yours was somewhere in the first four videos I checked (first few min) and I saw the tomato sauce and moved on...I'd forgotten I used it! I've skimmed video after video!!!!!!!!! So tonight, I'm beyond super thrilled and thankful I found you and this recipe/video of yours! I copied it down this time. too! Thanks so much for sharing the recipe and the "how to" video. (BTW: The church peeps enjoyed the Chili at the last carry-in, too!) My only change--I didn't have granulated onion or garlic, so I googled the equivalent for... It's super!!! God bless! And your little guy is adorable!!!

I have made a similar chili bean that I got off of Linda's pantry very scrumptious! She adds chunks of onion, garlic cloves and whole hot pepper if you like it that way😋 Great for hunting or camping trips!

Just what I was looking for! I typically do pints as I’m one person but this is totally doable. I think I’ll use homemade vegetable or beef bone broth instead of water. I love adding broth for extra flavor and nutrients. Appreciate it! Next on the canning list, I have a lot of dried beans to process. My canned ham chunks and canned northern beans are the bomb. Even my midwestern mom loves them. She said they have so much flavor! I used homemade ham bone broth when canning the ham chunks as well as when canning the beans (which is what they’re primarily used for). So easy, so convenient and took almost no time at all. Next time, I’m canning them together for a true convenience food. 🙏

These are awesome! They are exactly what I'd always bought cans and cans of in the grocery store labeled "chili beans." This is the way to go if you like those. And if you like it hotter, you can tweak now or later to suit. Thank you so much for sharing this recipe!!!!!!!!! I have passed ot on many times, along with "This is from YT's The Kneady Homesteader. yeah, i have 30+lbs of dried beans in my pantry and another 20lbs in jars above my cupboards. you can never have too many. LOL

Yes dear you're right they were burnt we feed all the little cridders raccoon,opossum,even a Ferrell cat or two and i almost forgot are favorite he lives under our big garage/barn structure he's been here for about 8 years now my husband named him Phil it's a ground hog and he weights around 50lbs i promise he's huge bigger than my dogs and they on the big medium size my beagle is approximately 60lbs so they loved them nothing left the next morning .u take care of yourself and that great family .

Heather Help! I want to can my Mom's famous chili. After it's made, I want to can it up. Do I have to pressure can it? It has ground beef in it.

Thanks for the video! So I noticed that in your canner you had water almost to the neck of the jars? I've only used about 2-3 inches of water. Does it make a difference?

water bath canners have to be full and cover the tops of the jars by a couple of inches, pressure canners do not, but if you fill it up to max capacity, it might go over your jars, which is ok as long as you follow the manufacturing instructions for your particular canner. :D

I noticed that as well... 3 inches in a pressure canner and over the jars in the hot water bath canner.... I always do a full load in the pressure canner because I don't like to waist the space and I've never had the water go over the jars...

it's always a good habit to get into especially when you're first learning, but i find with this you dont need to as much as you do when you are filling the jars full of food. like when canning green beans, carrots, meat.... anything you are filling to the top. i dont really have a problem with air bubbles when i am doing beans and water. now I did stir these jars after i finished filling all of them, but forgot to turn on my camera for that. so much chaos in my house yesterday! hahaha I almost forgot to film the last half of it!

It won't be as flavorful with the juice instead of the sauce, and you can try it with fresh onion!

She usually just washes them really well. If she speaks overnight she tends to let us know; but she tends to always just wash them and stick them in the jars.

Those really look great heather and it seems easy enough. I noticed upon wiping the rims with vinegar that the last 2 jars, you might have forgotten to wipe them with vinegar or did I miss something! Not sure but wanted to point it out.

no, i totally forgot! HAHAHAHA luckily for me they sealed ok! i didnt notice til editing. HAHAHA thank you tho! luckily that funnel protects the edges beautifully, it is like double covered so its great for noobs like me who might forget, because that thing keeps those rims CLEAN! :D

+Betty Tina i would find an approved canning recipe.... for safe amounts. canning onions can be gassy and onion and garlic become stronger over time, especially once pressure canned. so you will want to find a safe reciepie thats been tested and comes out tasting good. there are a ton of great recipes out there though! :D

I know this is an older video so I am hoping you see this! I love this recipe and I always keep these on hand. My problem with the recipe is that when I can them I always have one or two jars that do not seal. I am pretty sure it is because of all the spices that push through during the processing. Do you have this problem or have hint that would help? Thank you !

Gotta make sure to wipe all of the rims and be careful about the headspace, and then also make sure the rings are fingertip tight.

also, what lids are you using? generic lids dont hold up to pressure canning very well. some bernardin lids bought off of amazon in bulk that other youtubers promote have also been suspected of being seconds and are having pretty bad seal rates. so those things can be factors as well. i have been canning this recipe for years and never had a problem. 😕

Thank you for replying so quickly! I am sorry I didn't see your reply right away. I was delivering my chili beans and soup to my kids. Keeping the safe distance we need to do now. I did all the things you asked about, I am an experienced canner, not bragging but I have been at this many, many years😉. But for some reason I always have trouble with the chili beans. Not that it stops me because we all love your recipe. It just seems that the spices push through somehow. I was just wondering if you had this issue

Hey tell what you think about this jar of chiili beans i canned yesterday there is foam in the jar andd the color is kinda black i didn't use tomato sauce in it because i forgot it . i was going to send a pic but it won't let me i don't think i trust them

What if you wanted to make a quart of chili with meat? Would you back down the beans and add cooked ground beef? Otherwise the same?

They dont recommend canning chili in quarts. Only pints. Its a density issue. So the center of the jar doesnt get heated enough to kill spores that can make you sick. But you can definitely can chili with meat in pint jars!

I’m actually gonna be making this today and I have a question. With it being tomato sauce should you put in the citric acid in it or will it be fine because of the beans in it? I was thinking about this watching your video and was wondering 🤔

you can if you feel more comfy. ❤️ i have not found a problem, maybe it's because we don't use much of it? not sure. but i have been canning these for years without issue. but that is definitely your call! it wouldn't hurt to add it!

Thanks for sharing this recipe, it contained a lot of helpful info! I do prefer to soak first because soaking helps break down those pesky oligosaccharides, the indigestible sugars that cause gas in beans, as well as removing tannins, phytic acid and tryspin inhibitors.

All those jars that you made do you wait until they're done before you keep make you more ?? How long do they last in jars ??

jars last a minimum of 1 year but can last many, many, many years if properly stored. One homesteader here on youtube just made an apple crisp with canned apples from the early 1990's! and the apples were still good!

was the water level at the top of the jars?

when pressure canning you never worry about where the water level ends up. it will be different depending on size and amount of jars. in my canner, it needs 3 inches of water in it before adding jars. thats all that matters.

So when you say dry beans... have you soaked them at all or just washed and rinsed?

this is referred as the no soak method. 😊 i dont know a single canner that soaks her/his beans. we all do it this way. the beans turn out so much better. in my experience, soaking them first and then canning them leaves your beans so soft that when you take them out of the jar to heat them up, they do not survive. they turn to mush.

Lots of canners on KZfaq quick soak or overnight soak in order to abide by USDA guidelines which state that you must soak…the no soak method is considered to be rebel canning but a lot of people do it

GFS or Gordon Food Service. :) The sell bulk beans now, it's wonderful!

We like ours spicy. Can I add fresh chilis or wait until I make the chili? I have fresh chilis and I have chilis that I have canned.

You could add them BUT they will get really intense while under pressure for 90 minutes! It may ruin the flavor for you. I add my peppers when I make a pot of chili. ❤️

yep! just like green said..... a god 15 minutes. i usually rinse as i pick thru them, then as i am getting all my water/pots ready and jars, bring out my canner and such, i just keep them running under cool water and rotate and mix them often. :D

The Kneady Homesteader I think a 10 minute soak with occasional stirring to loosen the dirt followed by a 5 minute rinse might be more thorough, unless I'm missing something. Definitely easier on the water bill though :)
