I wanted to make a vegetarian stew with sweet potatoes, garbanzo beans, kale, and found I didn’t have a jar or any cans of beans, but did have a bag with some dried, so out came the canner. In the time it would take me to prep the beans, I put six pints into the canner. At the same time I mixed up some honey buttermilk sandwich bread( my favorite), so it has been a productive afternoon. I hope you are gaining strength daily, and finding simple joys in everyday life once again. As someone who has walked in your shoes, I know how grief always hides away and comes out when we least expect it. You are missed here , but we can manage until your time is right. Blessings, my friend.

@@TheKneadyHomesteader Oh yeah..about a month ago the list was long and Amazon gave me credit for a pack I had just bought. It's so easy to make..blew my mind and WAY cheaper! All you need is 1 cup hulled sesame seeds, toast them lightly on the stove top and throw them in the food processor to cool for about 10 min then process until they are crumbly and then add grape seed oil, canola or vegetable oil..2-3 tbsp.....process until smooth. Stores for up to a month in the fridge. Nice because you can make small amounts at a time.

Open the jar, drain the liquid, toss in food processor, add some tahini, some olive oil, a teensy lime or lemon to keep colour, grind it down. Brown up some ground lamb. Toast up some pitas. Put in a center bowl, top with the ground lamb, then frame the center bowl with pita triangles on the platter. That's how I've been doing it for about 30 years.

Another stellar canning video, Heather! I love having beans in jars ready to go. So much cheaper than store-bought, I know what's in there, and they extend many recipes to make meals super frugal. While raising our 7 children, we used a lot of beans and no one complained because they are delicious and filling in chilis, stews, "hummus," casseroles, etc. When combined with pasta or veg, beans provide complete protein so you can cut back on $ meat per serving. Time for me to do some more canning! With Love From BanDana Gramma

How can I do this with a water canner? I don't have a pressure canner.

Unfortunately you cant. Beans are a low acid food making pressure canning the only safe way to can them. ❤️

So if you lose headspace on a jar you shouldn't save them? I did beef stew and lost liquid in most if them. Are they bad??

its fine if you lose a little. but if you find its grossly low or your food is no longer in liquid, use it up first!

Doesn’t matter if you have well water or not. Should always add the vinegar to your pot water. Prevents the jars and pot from white film cover. Thanks for the information and making the video.
