You definitely want the fat in the hamberger. That is what flavors the meat. I absolutely loved the clip of the jar pop error. We all learn from our mistakes. People will learn from yours. Thank You so much.

This is how I feel !!! It is still alright to use that quart jar of hamburger !!! I had a jar that broke in my hands & I was thinking more about the canned beef then my hand that got hurt !!! I treated myself and stitched it up then cleaned up the mess !!! I sat and cried about the beef I had lost more than my hand that was hurting !!! So remember this jar are going to break sometimes and DON'T feel bad about the meat !!! Meat can be replaced but a hand can't be replaced !!! I was happy that I was smart enough to fix my own hand then in 1977!!!

We live out in bfe and my DH is on blood thinners. I happen to be a nurse, but really, its not rocket science! Amazon, internet sources, even veterinarians, have EXCELLENT access to steristrips and zip strips for "stitches", lidocaine for pain, bandages of hospital grade types- transparent films, gel bandages, bleed stop, silvadene salve/gel for burns and disinfection. Think ahead and have these things on hand!! Stash some in your cars, atvs, campers, tractors, cabins... Build slowly according to budget, but remember it's cheaper than the ER, faster, and YOU CAN do it yourself.

Whenever rings are stuck, try heating them up first! Turn the jar upside down and dunk in screaming hot water or if your stove is hot, sit on there upside down for a minute or two. The heat will expand the metal and it should come off without popping the flat lid. You’re the first canning KZfaqr that I have seen oiling the gasket in their Pressure Canner! Very important for a good seal. Great deal on the hamburger.

I always cook my ground beef before canning . For supper tonight , I opened a jar of hamburger patties I canned over 2 years ago . When I made the patties before forming into patties , I mixed finely chopped onions to the meat . ( Sometimes I add Lipton Onion Soup mix to the meat ). 5 nice thick hamburger patties fit perfectly in the wide moth jars . I used the broth off the patties to make a delicious gravy & then let the patties heat up in the gravy . That was the perfect meal paired with mashed potatoes from potatoes from our garden .

Thank you for mentioning the other version of preserving and that pressure canners are a luxury. I had the money almost saved for one...but life sometimes doesn't work the way we plan..

Thank you for showing how you used your pressure canner because I have the same one and I had never used it before and I’m not sure but I think I’ve had it in the attic for 5 to 6 or 7 years! 😂 why? I was scared to death it would explode on me! But after watching you and also Ruthann Zimmerman’s KZfaq videos it gave me confidence 💁‍♀️ so I tried it and it worked like a charm and I did 7 quarts and 8 pints of chicken in broth! Plus I never knew you were supposed to take the rings off! I was taught you leave it on….wrong! So that was liberating too since buying tons of them I think I have them (the rings that is) for my lifetime 🤣….ohhhh and when you said Dag nabbit…..I had to chuckle because you sounded Minnesotan! 😉💕👍

Looks good! Good job. Rings can certainly be trouble -I am kind of surprised it did not come off in the processing and that it sealed. Frustrating to be sure.

My Amish friends pressure can quarts for 30 min if the meat Is browned. They said they always have.

I read that you drain the fat for longer shelf life. I also have seen people leave more headspace for the fat that does come up. I love how you explain things. I feel more confident to can with my pressure canner.

The fat will help with the discoloration at the top that sometimes happens as well

I had the exact same thing happen to me with a ring pulling a lid loose. I learned from the first 1, now if a ring doesnt go on easily, it goes in the trash.

You can "dry pack" which means no liquid added. I only add any kind of liquid if I know I'll be making soup or something that has to have liquid. I season according to what I plan to make. If I don't know, I add a little salt. I like to brown it, doesn't seem to clump quite as much. I haven't done that with WB, only PC.

This was was informative! I have had issues with my rings as well! And get just as frustrated! I have some jars where I unscrewed them so they are loose but couldn’t remove them. I never thought my lids would be warped cause I haven’t been canning very long but apparently they are! Thank you for showing this in your video!!!! It was very helpful!

I love canning ground beef I use it in so many dishes I’ll do it for tacos, I use it in pasta dishes, Mexican cornbread and so forth. It’s definitely a must have on my pantry shelves, I normally just do mine in water if I don’t have beef broth. you did great and thanks for the video!! God bless🙏🏻💜

I've done break fast sausage and the beef Italian sausage too. Worked good but the collagen casings sorta fall apart. Still good but cant expect intact sausages...so I just de case them for now.

When I cans my ground beef. I didn't add any liquid. I wish I had seen this video sooner because all of my jars floated.😅 I had to weigh them down of course. But, now after seeing this video I will add beef broth.

I hope your PC’d ground beef turns out ok. I’ve gone to always canning my ground beef in the water bath. We tasted my ground beef after pressure canning and used it in a spaghetti dish, and it seemed to cook the beef crumbles to practically a smushy consistency. The texture was ruined and we just decided it wasn’t worth it. Back to the water bath for my ground beef!

@@sandracreighton6415 only lightly (about halfway), so that it wouldn’t clump into a solid mass. It would complete the cooking process in the canner anyway. But yes, just enough that the crumbles were separated.

I am very picky with my rings too. If it does not have the perfect feel when it goes on, into the garbage it goes, as I have had issues with rings that were a little rusty and such as well.

I understand what you say about the Presto canner, but I opted for the All American. It was $500 when I got it. It is now $650. It has the dial gauge on it, but it also has the weighted gauge, which is what I use. I do not have to re-calibrate the dial gauge, there is no gasket to replace, and all I need is a heat source, so if the infra structure starts to fail I can use it (no pun intended) over any heat source - wood, coal, anything. But I really like the Presto. Kinda wish I had both.

Don't throw the rings out! You can still use them on jars of dried goods, nails, bolts, craft storage jars and more. Just don't use them for canning.

Just a little idea that would make you money too… As someone wanting to learn how to do this I’d pay $30 bucks for a quick 30-40 minute zoom or video type call to ask questions or follow step by step. I’m really a visual learner and like to ask a lot of questions.. Just saying if you offered some type of questions and answers over phone (you can get a burner number on a free text app) or even video call you’d be a HUGE help to us all who want to be prepared and you’d be financially blessed as well!!! Let me know if you ever do!!! I feel like I over complicate things in my head when watching the video and not being able to ask questions along the way!!! 😩😩😩😭😭😭😭 Also, if you did a live video where we could watch live and ask questions as you did it it’d be so cool too!!! 🙂👍

I have had that happen when the ring was tight on the lid and ran it under hot water to loosen it up and it worked. Try hot water next time this happens.

God bless you sister! I wanted to warn you about the store meat because I'm thinking you haven't heard about it. Our govt recently passed onto law lab grown meat for sale.. not good its also in a lot of our veggies and fruits. I'm not eating as much bc I get mine from a farm and a processor and it costs more but hey I know what I'm eating. Please look into this sister who knows what it is but it's not real meat. Thank you for all you do!

80/20 ground chuck is $4.99/lb here in Kentucky. $2.99 when on sale. I can buy ribeye steaks for $6.99. This is very disturbing to me 😢

Love your videos, but where do they charge that much for ground beef? Ground beef is $3.99, and ground chuck is $4.99 here in Kentucky. We can get both in the discount section for $2.99/lb. I can’t imagine how they can justify selling beef for that much just because it’s in a state with a higher per capita income. I didn’t believe that there was price gouging going on for the most part, but apparently it’s widespread 😢

@@cynthiafisher9907 I could understand if it were local beef, but 90% of all beef in the US comes from the same area. Our local beef is much more expensive than beef in the grocery store. I’m just as far from Texas and Oklahoma as California is. Not sure where she’s located, but I’d be willing to bet beef costs double, if not triple in California, as it does in Kentucky.

The rings are only for holding the flat lid in place during the canning process. There are two reasons for removing the lids, to reuse them and so you can easily tell if a seal is bad. If the ring if left on, you can’t tell if the seal goes bad on the self.

You look especially beautiful today! I’ve only canned ground beef once and I wasn’t happy with the texture. I wonder if it matters what type of ground beef you can? Sorry for your mishap with the warped ring, but thanks for taking responsibility for it.

You could always Get different types of ground beef. Split each one in half. Raw pack one half in pint jars. Pre-cook the other half and place in pint jars. Once canning process is complete let the sealed jars sit for a week. Then do your taste test. I do this a lot of times to see if it is something that will go over well in my home. Once I figure out which one is best for my family. Then that's the one that I keep on doing from here on out. I can guarantee you, I do a lot of experimenting with canning foods.😂

I guess you have to be used to home-canned meat. Personally, I don't like the texture of raw pack or cooked. But I totally get why you do this!
