I mixed in a bit of vinegar to a jar and used it as sweet and sour sauce for chicken, it's a keeper!

I hold the jars with gardening glove that had a rubber coating to keep from burning my fingers. Their not bulky like a kitchen mitt. I have a pair in my kitchen just for canning.

I have been looking for a small batch pepper pineapple jelly!!! Finally found yours!!! I added a little vinegar to mine to make sweet and sour chicken this week!!! Sooo yummy!!!

On the second time watching the video I paused it and made a batch. It tastes just like the expensive pineapple/pepper sauce that my husband likes so much. Making it is probably less expensive than buying it. (My husband bought it so I don't know how much he paid for it at the store.) I was going to try to make a second batch so the canner would be full but it's almost 9:00 p.m. After going to a u-pick place and picking raspberries, zucchini and peppers (for this recipe!) and getting too hot I am 100% bushed. Thanks for the great recipe. I see below you said you put 4 cups of sugar in the recipe. I couldn't find that info on the video so I appreciate you answering another commenter's question about it.

Btw, did my All American canner full of fiesta ranch pintos. Omg. Broke open a jar this morning. AMAZING.... wish I would of added salt though. I like salt! What amount would you recommend for a nice salted pint?

That's definitely a must try! Try turning the jars upside down after they've cooled down a bit and are beginning to gel. Some of the peppers should rise back to the top and you'll have them evenly distributed throughout the jam.

I make a pineapple jalapeño, apricot and habanero and also an apricot and ghost pepper jam each year. I have to make several batches of the ghost pepper one because I brought it to my husbands Christmas party one year and the guys ask for it each year so they each also get a jar of their own 😁. I started growing my own peppers a few years ago to be a bit more cost affective, lol.

Is that 2 different jams you speak of? I have tons of hot peppers started and almost ready to plant this year. Planned on a plain pepper jelly but that sounds wonderful.

Three separate ones indeed. We grew the jalapeños beginning a few years ago and started the habaneros and ghost pepper a few years ago, I still have to buy the habaneros because they don’t seem to do well for me but the jalapeño and ghost peppers are prolific for me and we dehydrate what we don’t use fresh.

Have you tried mixing either of the apricots or pineapple jams with a bit of soy sauce and using it to glaze salmon? It’s so darn good like that.

Peppers usually float when you use added pectin.

What causes the things and loss to turn black in spots? I have had this happen on occasion and I don't know what is going on with them. Any suggestions would be great.

Not sure I understand "things and loss" but, not stirring constantly and having the contents scorch a bit would cause black spots.

You can mix the peppers, but not double the recipe

Would there be a way to do this with less sugar?? I love my jams and jellies but they are so laden with sugar and I am trying to cut back.

Sugar is what preserves it. I personally don't have a recipe for a sugar free type.
